Chicken and Broccoli Casserole

Parents always complain to me that they can't get their kids to eat broccoli. Still, I try to find new ways to use it in recipes, because broccoli is not only packed with beta-carotene, folic acid and vitamin C, it's a fun food for toddlers to pick up.
Kenya loves holding the little "trees" and munching off the tops and then making his way down the stalk. Instead of "sneaking" or "hiding" it in your kids food, let them know how good it is for them. Eat some yourself and show them how much you love it or try dipping in hummus or another spread. Or try this recipe. It is such an All-American dish. It's one of those comfort foods that's actually kind of healthy (minus the cream sauce in the adult version, of course).


We used these to make this recipe:

Chicken and Broccoli Casserole  (14 Baby Serving)

  • Prep Time:2 minutes,
  • Cook Time: 8 minutes,
  • Total Time: 15 minutes,

Ingredients

  • 1 chicken breast
  • 1 potato, peeled
  • 1 cup broccoli, florets
  • 2 tablespoons cheddar cheese

Preparation

  1. 1. Place the chicken and potatoes in a steamer pot over boiling water
  2. and cook for 5 minutes.
  3. 2. Add the broccoli and continue to steam another 3 minutes or until the
  4. chicken is cooked through and the vegetables are fork tender.
  5. 3. Place all the ingredients in a food processor and puree until smooth
  6. (or leave chunky for toddlers). You may need to add water from the
  7. steamer pot to make smooth.
  8. 4. Cool and serve.
  9. *Place in Baby Cubes and freeze.

    I made this for my daughter and she loved it fresh. When I thawed some a few days later the texture was spongy and did not return to a purée even with water added. Other recipes including yours have been edible and quite delicious after freezing. Do you think I did something wrong?

      That is very strange! I’m not quite sure why it would come out spongy!

    do you cut up the chicken before steaming?

      You can to make the steaming quicker, but I usually steam the chicken whole and cut it up after!

      I love this recipe! Something I do with this recipe is either make – http://weelicious.com/2009/01/06/twice-baked-potatoes/ and add chicken to it or I double this recipe and toss the cooked chicken, broccoli, potatoes and cheese with some pasta and put it in a baking dish and top with marinara sauce and some more cheese and bake for 15 min at 350 or until cheese is melted and heated through then serve! But you need to add some seasonings to it like salt or garlic powder to bring out the flavors :)

    It’s so nice to see a kid food website that doesn’t focus on trying to hide vegetables. How else will they learn to love them if they don’t know that they’re eating them?
