Life is moving so fast. I wanted to make this recipe for Kenya for Cinco de Mayo and somehow totally forgot. Sadly, I think Alzheimer’s is setting in early.
Kenya loves beans. Whether they’re pureed in a dish, mixed with other ingredients like this dish, or on their own, he loves ’em.
The vegetarians in your life will also love you for making this. Simple, yet packed with flavor. You don’t need to celebrate a holiday in order to whip this dish up.

Mexican Rice & Beans

Ingredients  

  • 1 Tbsp onion, finely diced
  • 1 Clove garlic, chopped
  • 1 Tbsp oil
  • 1/2 Cup Brown Rice
  • 1 1/2 Cup water
  • 1 Cup Black Beans, cooked
  • 1 Tbsp cilantro
  • 1/3 Cup Tomatoes, finely chopped, fresh (peeled) or canned

Instructions 

  • Saute the onion and garlic in the oil in a saucepan over low to medium heat until soft, about 3 minutes.
  • Add the water and rice and bring to a boil.
  • Cover and simmer for 50 minutes or until all the water has absorbed.
  • Add the black beans, cilantro and tomatoes and combine.
  • Cool and serve.
  • *If your baby doesn’t eat solids, you could easily puree this recipe.
  • *In this recipe I prefer organic canned tomatoes. Some little ones have texture issues, so it’s much easier for babies to eat the soft canned version.

  1. I am excited to try this recipe. We are trying to get our 20 month old daughter to try new foods. That being said, I didn’t appreciate your reference to Alzheimer’s. I watched my grandmother die a slow death because of what that disease did to her. Please refrain from making comments like that. Your “problem” isn’t Alzheimer’s; it’s forgetfulness.

  2. My son and I love this! And I love your blog btw. As a single mom who works full-time as a nurse I have some MAJOR guilt about having to send him to a daycare. (Alabama isn’t exactly overrun with nannies). Anyway – thanks to your blog I’m able to make his foods and send them from home knowing their fresh and healthy. We aren’t exactly overrun with “healthy” around here either if you hadn’t heard. I’m trying so desperately to help him form the right type of outlook on food and health so that he doesn’t crave deep fried foods covered in either cheese or powdered sugar on a daily basis for the rest of his life (like his mom 🙂 Your blog has helped me so much in this effort and I really want to thank you for that!!!

  4. Could there be a typo in the recipe? 1 1/2 cups of water to 1/2 cup rice seems like a lot. Maybe that is why the other reviewer had a problem? Just found this website– love it!!
