Memorial Day Cinnamon French Toast with Berry Sauce

During the week we rarely get to treat ourselves to a yummy breakfast. I think Memorial Day is the perfect time to whip up this weelicious favorite for you and your family. You may need to double this recipe if Daddy's is going to be eating it too!!

Berry Sauce (makes 1/3 Cup)

1/2 Cup Mixed Berries (any mix of strawberries, blueberries, raspberries will work)
1 Tbsp Agave Nectar or Honey

1. Place the berries and agave or honey in a saucepan and cook over low to medium heat for 3 minutes or until the berries begin to soften.
2. Serve over french toast.

*Place in appropriate tupperware or ziploc bag and freeze.

Memorial Day Cinnamon French Toast with Berry Sauce  (Makes 2-4 Pieces depending on the type of bread you use)

  • Prep Time:2 minutes,
  • Cook Time: 6 minutes,
  • Total Time: 8 minutes,

Ingredients

  • 1 large egg
  • 3 tablespoons whole milk
  • 1/8 teaspoons cinnamon
  • 1/4 teaspoon vanilla extract
  • 2 slices whole wheat bread (4 slices if you use a more dense bread, 2 slices for a fluffy bread)
  • 1 2 tsp butter

Preparation

  1. 1. Whisk the egg, milk, cinnamon and vanilla in shallow dish.
  2. 2. Place 2 slices of bread in the dish to absorb the egg mixture for 1 minute. Flip and let the other side soak up the egg mixture.
  3. 3. Heat a saute pan over medium heat.
  4. 4. Melt butter in the pan and place the bread in the saute pan. Cook for 2-3 minutes or until golden.
  5. 5. Flip and cook on the other side for 2-3 minutes.
  6. 6. Cool and serve with berry sauce.
  7. *Allow to cool, place in a ziploc bag, label and freeze. When ready, place in toaster oven or oven at 300 and heat for 10 minutes or until heated through.
