Your kids don’t like green vegetables? They will as soon as they try these Kale Chips!

If I give the kids a choice of sides for dinner without a doubt they will both ask, rather scream for “KALE CHIPS”! They know that they’re a nutritional powerhouse, but that’s not the reason they love them so much. The crunchy texture and taste alone would sell just about anyone. I’ve had this recipe on Weelicious for such a long time I knew it was time to give it a little love for Rewind Wednesday. Over the years I’ve made them with every kind of kale I can get my hands on from dinosaur, to curly to purple and more. Each one cooks up as beautiful and delicious as the one before. Make too many? Just pop them into zipper bags or glass containers after they fully cool for a treat you can enjoy all week long!

When you’re trying to inspire kids to eat healthy, my experience has been if whatever you are making for them is in the form of a chip, muffin, pancake or on-a-stick, it’s usually a hit! We’ve been making these kale chips a lot recently and I can’t tell you how fast they disappear! I truly can’t believe how tasty they are — I know that’s a huge statement, but I think I like them even more then potato chips (and that’s saying a lot)! They’re crispy, crunchy and on two recent occasions when I served them to kids — several of whom normally turn their noses up at anything green — they devoured the entire bowl full in minutes.

Another plus is that kale is among the most nutrient rich of all foods. Loaded with vitamin A, C and calcium, this is a vegetable that gets an A plus for nutrition and one that you definitely want your kids to be eating!

Ingredients  

  • 1 Bunch Kale
  • 1 Tbsp cooking oil spray

Instructions 

  • Preheat oven to 325F degrees.
  • Wash and remove stems off the kale and cut leaves into 2 inch pieces.
  • Divide the kale between 2 cookie sheets lined with a Silpat or parchment paper, drizzle with oil (or spray with oil) and toss to coat (make sure there is a bit of space between the pieces of kale so they don’t steam).
  • Bake for 18-20 minutes (keep an eye on them during the last few minutes of cooking so they don’t burn).
  • Serve.

    Love love love your site. I’ve made so many of your delicious recipes. Question about the kale chips though. I made them last night and they were delicious and crunchy right out of the oven. I stored them in a tupperware on the counter overnight after they had cooled and now they are chewy and pretty much inedible! 🙁 Do these need to be eaten immediately or is there a better way to store them? I’m so disappointed because they were so yummy last night. Thanks!

  3. I made a batch and my 17 month old loved them! The first two batches were experiments as I figured out the correct amount of oil, oven temperature, and cooking time for my specific oven (the first two burned), but I managed to get crispy green kale after the third try. Thanks!

  4. I like to have the kids help. IF we buy non-organic, I soak them in the sink for a long time. Then after cutting them into smaller pieces (I think a key in making them crunchy) I let the kids spin them dry in the salad spinner. garlic powder, evoo, 15 minutes and then YUM. If there is any left over I smash it up in their pasta the next day.

  7. those who found their chips to be bitter…i’ve discovered that kale i’ve grown myself and pick while the leaves are still semi small have a much milder taste. they are amazing versus the store-bought big bunches that are strong and have a strong sent when in the oven. we use MCT oil and salt and cook on 250 for 20 minutes.

  9. just made these n i love them! one tray came out perfect n crunchy n the other tray i think i put to close together n they steamed but me n my daughter love them both! cant wait to make again with kale frm my moms garden!=)

  10. I finally tried these today. I used purple kale (hoping the colour would catch my kids’ fancy) and a bit of fleur de sel. I couldn’t convince the kids to try it, but I quickly went through half the batch on my own. I think I have a new addiction!

  11. I just made these, and they are delicious! My first batch burned after only 7 minutes or so. I only had to cook the next batch for about 5 minutes. I sprinkled them with a bit of salt, and they were amazing!

  14. For those of you who didn’t like these amazing kale chips, try flat kale /Latincino…they sell it at whole foods, at least in LA, and I grow it in my garden. This makes a big difference in the taste (I’ve tried both ways)

  15. I was actually glad to see some other people didn’t like them either. I REALLY wanted to like them, but they were just so bitter. Definitely not for me, I couldn’t get the taste out of my mouth.

  16. These are awesome! I don’t know why i haven’t tried them sooner. I made a small batch for my 2.5 y.o. b/c i was skeptical and she just kept saying “mmm, these are good mommy. i want more”. I had to promise to make her more tomorrow. I actually cut the kale into smaller, bite sized pieces (to help minimize crumbs and to make them more appealing to her) and only needed to cook them for about 5 mins before they started browning. I used spray olive oil and it worked great!

  17. I love raw dehydrated kale chips. You can make them plane (same recipe as on here), or cheesy, or spicy – cheesy is our fav! :)) LOVE LOVE LOVE kale chips.

  21. Store them in a container and leave on the counter, no need for fridge. You can even put them in ziploc bags 🙂

  23. i pulled my first batch out of the oven (cooked about 12 minutes) about 20 minutes ago & my 17 month old is in heaven!! she begs for chips when my hubby has them occasionally, but i’d rather her not eat that junk. what a great, healthy alternative! i find them a bit bitter, but think i could aquire a taste for them.

    i just love this site! prior to weelicious, i wasn’t even aware that kale existed & i do my fair share of healthy cooking.

  24. Yup, every oven is different, i’m glad that you gave them another try and tested them at a different time. Its interesting to see how everyone’s oven work.

  25. I also had to bake for about 6 minutes. I baked the first batch for 12 minutes and they were all burnt, tasted really bitter. I baked the subsequent batches for 6 minutes and they were perfect.

  26. Took out at 15 minutes & some tasted a little burned, which made kale taste a little bitter…but son loved! He didn’t end up eating THAT much, but I think we have a winner! Will bake a little shorter time next time. Turned out very crispy!!

  27. I only had to bake mine for 6 minutes or they would have burned… a lot shorter but delicious!

  28. Banana-Wee Muffins are soo good! With the kale, you have to watch it in the last minutes, also every oven is different. I would try baking them again for 15 minutes and see how they turn out.

  29. Made them last night and unfortunately they burned 🙁 I baked for 18 minutes but wasn’t paying attention during the last minutes (was too busy making banana wee muffins). Should I just cook them less time next time?

  32. These are truly DELICIOUS and my kids eat them up too! Love them. I make them at least once a week. I just wanted to add that organic kale is best if you can find it because kale is on the “Dirty Dozen” list of fruits and vegetables that contain the highest amount of pesticides.
