The other day on Instagram I asked the question “do your kids like avocados?” and an overwhelming number people responded. Not only did most parents say that their kids like avocado, they said they love them! Avocados are heavenly — creamy, smooth and delicious — but did you know they’re actually a fruit (for years I thought they were a vegetable)?

Instructions 

  • Cut the avocado in half. Use a chefs knife to pull the pit out.
  • Scoop the flesh out and place all the ingredients in a food processor and puree.
  • Serve.

PREP TIME 15 MinCOOK TIME 45 MinREADY IN 1 Hr INGREDIENTS (2 (7 ounce) cans whole green chile peppers, drained8 ounces Monterey Jack cheese, shredded8 ounces Longhorn or Cheddar cheese, shredded2 eggs, beaten1 (5 ounce) can evaporated milk2 tablespoons all-purpose flour1/2 cup milk1 (8 ounce) can tomato sauce DIRECTIONSPreheat oven to 350 degrees F (175 degrees C). Spray a 9 13-inch baking dish with cooking spray.Lay half of the chilies evenly in bottom of baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chilies.
