We’ve been going to a small, but fantastic, farmer’s market near our house on Saturdays in order to satisfy my husband’s recent obsession with tropical fruit. One of the vendors there sells pineapples, papayas, mangos and bananas that taste so fresh, you’d think you were on a tropical island.

By mid-week, if I’ve cut up all of the fruit but there’s still some left in the fridge, we love making smoothies with it. Not only are smoothies nutritious and fun for kids of almost any age to help prepare with you, they’re also a great use of any fruit you have laying around that may be overripe and otherwise going to waste.

Tropical Coconut Smoothie

Equipment

  • blender

Ingredients  

  • 1 cup coconut milk (canned is fine)
  • 1/3 cup plain or greek yogurt
  • 1 banana (frozen if you want it extra creamy!)
  • 1 cup pineapple, cubed (frozen if you want)
  • 2 tablespoons agave or honey
  • hand full of ice (omit if using frozen banana or pineapple)

Instructions 

  • Place all ingredients in a blender and puree until smooth.
  • Serve.
  • *Do not add honey for children under 12 months.

  1. Ooookay, so this was amazing! Admittedly my husband and I made this into an adult drink by adding coconut rum. We didn’t have plain greek yogurt so I added vanilla, and we didn’t have pineapple but we had frozen mango. I will be making this again for sure!

  2. If you have a little extra time, you can freeze the bananas first so when you blend it all up its a little thicker and creamier. it also makes it colder which when you think of smoothie you think of cold on a hot summer day

  3. It is interesting that still in this day and age there are such scares about feeding honey to babies. I am not condoning it because I am very aware that some honey can contain spores of botulism. However, it should be noted that every raw food contains them so should be eashed with precision before being fed to babies. There are some countries who do not agree with these theories at all, in fact they are not considered “born” until they have tasted honey from their father’s fingertip. Botulism is killed off by stomach acid in adults and children. Always use this as a sweetener in your honey recipes, it is full of nutrition which all children need to grow up healthy. I love some of your recipes…….almost makes me wish I was a baby again!

  4. When you say coconut milk are you referring to coconut milk as in a dairy free alternative to milk or coconut milk as in canned and used in Thai recipes

  5. Just a quick FYI. Don’t give honey to kids under 12 months, not because of allergies, but because honey can contain botulism that their little tummies can’t fight off like older people can.

    Awesome recipe, and like you said, it is a great way to use whatever fruit is over-ripe in the fridge. We never seem to have fresh ice in the fridge when we need it, so maybe chopping and freezing some fruit in advance can still net us the smoothie experience.

  8. yummmm! Pineapple were $1 each at the store, bought 4 of them and frozen them – this will be perfect!
