One of the greatest cooking accomplishments for a mom is figuring out how to stretch one meal into two or even three over the course of a couple of days. It saves time, energy and money, but the challenge is actually pulling it off! It’s not as hard as you may think.

Here’s one of my favorite quick dishes that can become three awesome meals. It starts with Crock Pot BBQ Chicken for dinner, moves to BBQ Chicken Quesadillas for lunch the next day and Shredded BBQ Chicken Sammies for dinner that night. They’re all delicious but totally different from one another. Your family will think you’re constantly slaving away in the kitchen to prepare dishes for them that actually took you no time to prepare at all!

  6. This is such a great idea. I’m always trying to come up with ways to re-use leftovers. This chicken would also be great on a homemade BBQ chicken pizza… one of my family’s favorites!

  7. You’re TOTALLY right! The hard part about doing videos sometimes is the amount of time. I try to keep them around 3-4 minutes, but this one wasn’t already going long (3 recipes). Hand washing is so important. I’ll do it next time and forget about the extra few seconds of time 🙂

  8. I know this is a video and you have to be done quickly. But I have one small thing to point out. You don’t wash your hands before opening the crock pot.

    This is funny because you do say in the video that it is very important to wash your hands.

    I didn’t mean to offend you but it is something I noticed.

  9. Great idea! I was just wondering what I was going to fix for Sunday lunch and I think this is it! We take turns in my husbands’ family on who cooks each Sunday. I was stumped for my next turn and wanted to do something different. Thanks as always! I can definitely do the leftovers for other meals if there is any left. 😉
