Let’s be honest, one of the easiest things moms can make for school lunch is a sandwich. Since the possibilities are endless for what you can do with two pieces of bread and a filling, you’ve probably almost always have the ingredients on hand to make something yummy. Chances are all of you have a go-to sandwich you make for your little ones that is sure to please them. I’m constantly looking for new and exciting sandwich recipes, so here’s where YOU get to have some fun.

Below, post your favorite, unique sandwich recipe that your child always devours, and my ten favorite ideas will receive a LunchBot sent right to your home so you can pack up your original creation for next week’s lunch in style!

  1. I love using a whole wheat pita. I fill it with a vegetarian meat, shredded cheese, lettuce, shredded carrots, hummus, etc. It is so easy for my son to eat and he loves the variety he finds each time I use it.

    My kids *LOVE* peanut butter, banana and honey sandwiches. I like it because it incorporates fruit, protein, and complex carbs. AND it’s easy enough for my 6 year old to prepare with little help. We start with 2 slices whole wheat bread, 1 half ripe banana, 2 TBS peanut butter, and 1/2 tsp honey (optional). Spread the peanut butter on one slice of bread. Smear a tad on the second piece of bread to help hold the banana in place. Slice the banana length wise on into medallions and place on top the slice of bread with the most peanut butter. Drizzle with honey if desired and place the last slice of bread atop. Slice diagonally to make it easier for small mouths to eat! For a special treat, we start with toasted bread or toast the bread slightly after the peanut butter’s in place. Yummy! (Just be careful with this version b/c the peanut butter can get warm very quickly and can slide off the bread and burn if it comes in contact with skin.)

    how is “sandwich” defined? good stuff between some kind of grainy carb? how about a whole wheat tortilla with cream cheese spread, corn and black beans. other things could be added like olives or chopped bell peppers of any color.

    My son loves cream cheese, almond butter, banana and cinnamon on whole wheat bread. Sometimes I use honey instead of cinnamon, and sometimes I use both! Easy to make and he devours it!

    My kids prefer wraps to sandwich bread most days. Lately we have been alternating between 2 favorites (both centered around peanut butter).
    1. whole wheat wrap filled with: peanut butter, bananas, dried cranberries, honey
    2. whole wheat wrap filled with: peanut butter, diced apples, sliced almonds, honey
    Some days I serve it as a wrap. Some days, I slice them into pinwheels. Both go over well.

    Well, it’s not really a sandwich recipe…but…

    I have a large array of metal cookie cutters. Since my 3 1/2 year old is not big on crusts, these work perfectly and are much more fun then a typical square crustless sandwich. I also have seasonal ones, like a heart for Valentine’s Day, a ghost and pumpkin for Halloween, and a tree and gingerbread man for Christmas. My daughter can’t wait to see what “shape” her sandwich will be at lunchtime at daycare!

    A never fail sandwich with my kids is a type of greek pita sandwich. I take a piece of whole wheat flat bread, and fill it with organic feta cheese, garbanzo or kidney beans (sometimes both), chopped cucumber, tomato, chopped parsley, spinach, dried oregano, and then drizzle it with a yogurt sauce. (Mix plain yogurt, mint -fresh or dried, and a tiny bit of lemon juice.) Mine ends up looking like a taco, but you could always use pita bread and stuff the inside with the fillings. I love this sandwich because its so versatile! You could use some or all of the ingredients I listed, and it still always tastes great!

    we love turkey breast meat and a slice of cheese between whole wheat bread. melting the cheese a little makes the bread stick and then we cut the sandwich up into four thinner strips and dip into hummus for added fun. served along side broccoli, carrots, celery and cucumbers makes eating those veggies more enticing.

    also, peanut butter with bananas between whole wheat slices is another favorite. we make faces with the banana slices before completing our sandwich, accented with sunflower seeds, dried fruit (cranberries, blueberries, strawberries), flax seed, and other goodies in our cupboard at the time. you might think some things are strange in this combination but the kids love it because they made it!

    My daughter LOVES peanut butter and banana sandwiches. I told her how Elvis love them but with bacon too. She is not willing to try that, lol.

    Salmon spread

    1 pkg cream cheese
    1 can canned salmon
    1 med. onion, diced
    1 tbs. white horseradish spread
    2 tbs. ketchup

    I mix with an electric hand mixer , I think a food processor might make it too creamy for my kids.

    my daughter recently stopped devouring any kind of food that isn’t cereal and waffles (break my heart and drive me crazy) . so I do waffle iron sandwiches. I used whole wheat bread and for her I cut off the crust. butter the outside of each slice. we use oven roasted chicken sliced really thin, sprinkle shreded cheese, tomato slice (very thin so it gets melted in the cheese and she can’t pull it out.) and if you can get away with it-I mash an avocado and spread it thinly on the insides of both bread slices. now that the sandwich is compiled, place it in a hot waffle iron, press down and wait til golden brown. my daughter likes to point out that this sandwich is in no way a waffle. but she does eat it. it’s perfect for her because the melted cheese blends the sandwich together, otherwise she dissects the sandwich and eats only the parts she likes.

    Nacho Sandwich

    whole wheat English muffin, toasted
    Can of Vegetarian Refried Beans
    Cheese
    Tomato slices (sometimes we use salsa)
    Avacado slices

    Spread beans on one half of the English Muffin
    Top with tomato slice and avacado
    Sprinkle with cheese
    Place under broiler until cheese is melty
    Top with other English muffin half. YUM!
    *If we are really hungry we put toppings on both sides and eat it open faced :)

    my 3 year old daughter loves hummus, she loves to sandwich cucumber, roma tomato slices, hummus and yogurt together, she has her own little assembly line for every lunchtime, my son loves english muffin with PB & J and banana slices

    We are crazy for anything buffalo in our house.

    I make a mixture of cream cheese, bleu cheese dressing (or crumbles if I have them on hand), and Franks hot sauce (more or less to taste/heat) and spread it on whole wheat bread or a wrap. Add thinly sliced chicken (great with leftovers!) Now that I think about it this would be good grilled too…I know what we are going to have for lunch today!

    We do a “grilled” cheese, but in the toaster oven without added butter/oil. Inbetween the cheese, which is usually soy cheese, I put hummus (with pureed veggies mixed in) or straight up pumpkin or butterbut squash puree . Sounds weird, but it just melts in without too much flavor, but an extra veggie boost!
    Ham and Cheese in a wrap, melted is one my 20 month old now likes too.

    My son’s most recent favorite “sandwich” is tortilla pinwheels with cream cheese, hummos, smoked salmon and lettuce. He devours them!

    My daughter is allergic to a lot of things (dairy, sesame seeds, onions, etc…) so we have to be creative when it comes to meals. We have a little farm and grow a lot of our own vegetables, fruit and meat. She will eat anything she has helped tend to in the garden or has fed in the yard. Her favorite: home-made whole wheat bread (one slice cut in half) slathered with home-made hummus (minus the tahini – I use mashed avocado instead) with bean sprouts, cucumbers, tomatoes, spinach and a thin slice of organic turkey meat (home-grown – sometimes she eats the meat other times she just wants the veggies). She always eats this with some form of fruit smoothie (just fruit, ice and water) and “potato chips” (dehydrated potatoes or fruit slices).

    This sandwich is so delicious! Everyone in the house loves it!
    Use 2 slices of organic sourdough bread & drizzle each side with some olive oil. Spread blackberry jam on one side and top with a handful of arugula. Sprinkle a handful of shredded mozzarella on the other piece of bread.

    In a panini press or grill pan cook the sandwich until the bread is lightly toasted and the cheese has melted.

    My kids love Nutella. I spread Nutella on either whole wheat bread or those sandwich thins. Then I take strawberries and or banana’s and slice them really thin and lay them on top with a little drizzle of honey. They love it and it’s quite healthy. It almost feels like eating dessert.

    During the holidays we love gingerbread, so I make gingerbread pancakes and waffles and freeze extra for sandwiches or quick breakfasts.

    For the sandwiches, I spread a waffle or pancake with cream cheese and black current spread.

    My oldest likes turkey, so I make him a turkey, swiss and black current jam between two pieces of gingerbread waffle.

    Speaking of waffles and pancakes as the “bread” I also make banana and flax flavor to make almond butter sandwiches with.

    My daughter loves hummus so we always have that in our fridge. To make sandwiches, I take a piece of whole wheat bread, let the kids flatten it with a rolling pin then use a round 3 inch cutter to cut out a circle. (looks like a round wonton wrapper) Place the flatten round bread in a dumpling press, spoon a little hummus onto the center and a quarter of a hard boiled egg. Close the press to make hummus dumplings! I know, that is a ton of protein and seems like a lot of work, but the kids really love it and it is fun for them to make. :-)

  26. We use 100% whole wheat sandwich thins, some whipped cream cheese and a few slices of turkey lunch meat. The thins are circles so I cut it up like mini pizza slices. Anything that looks cool gets eaten quicker.

    We love avocado sandwiches. Very simple to make and delicious! We use whole grain wheat bread, avocado (either slices or mashed creamy mixture) thin slices of cucumber and tomato. My boys love this! I also use thin slices of smoked salmon for myself. ;)

    I was just looking at these the other day. Would love to win this! Unfortunately the only sandwich my 4 year old devours right now is Nutella on whole wheat. She LOVES her chocolate sandwiches!

    We’ve been using the bagel thins a lot recently. I make either a ‘traditional’ sandwich of ham/turkey and cheese or mix it up with peanut butter and thinly sliced granny smith apple or cream cheese and black berry jam.

    My son LOVES grilled cheese but to up the health factor I add a few things. Use Target brand (Market Pantry) apple bread. It’s slightly sweet but not over the top. Mix a little pumpkin puree with agave nectar and a pinch of cinnamon then spread on inside of sandwich. My son’s favorite is sharp cheddar but you can use any cheese. Between the cheese slices I add in some chopped up turkey lunchmeat. Sometimes I chop some apple up into tiny pieces and add it with the turkey as well. Butter the outside and “toast” it in a pan like a normal grilled cheese. Tons of flavor and all the food groups— who doesn’t love grilled cheese?

    My daughter loves whole wheat tortillas, spread with whipped cream cheese, and dotted with raisins and/or cranberries (she likes to put them on herself in various designs). then I roll it up and cut in half.

    Mashed avocado+nutritional yeast on whole grain bread

    Mashed banana+tahini on whole grain bread

    Both are so yummy!

    A favorite at our house is “bean n cheese.” It started over a year ago when my daughter, now 2, wanted a quesadilla for lunch, but we were out of tortillas. So instead of a bean and cheese quesadilla, I suggested a bean and cheese sandwich. We keep cubes of pureed black beans in the freezer, which are easy to heat in the microwave and mix with shredded cheese. After spreading on bread (we use whole wheat), it can be served cold, microwaved, or grilled (as in grilled cheese). We also enjoy a variety of add ins: salsa, avocado, or cubes of pureed veggies. Butternut squash and sweet potatoes are especially yummy! It’s a great lunch because it has protein + complex carbs + veggies (if added), and it’s warm and filling!

    Two cheese and mustard grilled cheese sandwich. I put a thin layer of regular yellow mustard on both slices of bread, next I add a slice of American cheese, then I add white cheddar cheese. I grill the sandwich in a panini press. The mustard and cheddar gives the sandwich an extra zip in flavor.

    I take the trader joes cresent rolls and spread some low fat veggie cream cheese on each triangle with some trader joes turkey lunchmeat and fold them up into a cresent shape and bake.

    As a kid, my dad made spaghetti sandwiches for me and my mom made butter, mayo, and liverwurst sandwiches.
    As an adult, I make lunch for my daughter. She enjoys vegan turkey with vegan cream cheese spread in a tortilla roll-up. She also likes cheese (grilled or plain) sandwiches that are cut into her name, using cookie cutters. I also make hummus and veg sandwiches on occasion.
    However, the weirdest, wildest sandwiches I’ve ever made for her have been while ill. Those sandwiches are “kitchen sink” sandwiches or “bare bones” sandwiches. I either throw a little of everything in, or I slap a few slices of this or that in between the bread. The worst was when I had been up all night, ill, and forgot to take the plastic off the cheese slices, before putting them in the sandwich. Her teachers got a good laugh from that!

    My new favorite go to sandwich is very simple, but so delicious…..apple and peanut butter!!! Cover both sides of the bread with PB, slice apple as thin or thick as you like, enjoy! It is so good and easy!

    My kids are obsessed with waffles! we make waffle sandwiches for breakfast and lunch1 there favorite is nutella, peanut butter and bananas between two waffles. sometimes we also have strawberry cream cheese and blueberries. yum!

    Peanut butter banana “sushi”

    Flatten a piece of bread (oatnut bread is our favorite) with a glass or rolling pin. Spread peanut butter on the bread. Cut a banana the long way into quarters. Lay a quarter on an edge of the bread and roll up. Cut into slices. Sometimes we add honey, too. The whole family likes this one.

    My son is not a big sandwhich eater. Instead, we use whole wheat tortillas and make ‘sandwhich’ wraps. His favorites are hot ham/turkey with cheese and sun-butter (sunflower seed butter) with apple ‘spread’ (we just use our pampered chef chopper and chop up frsch apple).

  44. The “sandwich” my daughter likes best is actually a wrap/quesadilla — which we call a taco : ) It’s chicken (ground or sliced with lime seasoning), red peppers, corn. And then cheese put on a tortilla, then rolled up. Then sliced like jelly roll.

    My kids love sandwiches in general, so it’s hard to decide what’s really a fave.

    I had a teacher growing up, though, that used to make us bagel pizzas if we did well in class. I remember them fondly.

    My version tops half of a whole wheat mini bagel (love Trader Joe’s) with tomato sauce (I usually have homemade around), a small hand-full of shredded mozzarella, and whatever veggies and meat combinations I have around the house that day. Broil until the cheese is bubbly and happy and voila!

    We spread red pepper hummus onto a whole wheat tortilla then sprinkle matchstick carrots. Sometimes we add red pepper strips to make it even crunchier. Yummmm

    A wrap with turkey, spinach, cucumber and hummous. Sometimes I add shredded carrots.

    We make an italian inspired grilled cheese. Whole wheat bread, provolone, pesto, tomato and spinach. My 18 month old used to take it apart and eat it piece by piece but now loves it as a real sandwich, or quesadilla depending on what we have on hand! :-)

    My six year old daughter loves “Salad Sandwiches.” I toss lettuce, tomates, shredded carrot, cucumber, and chick peas with a little bit of Ranch dressing. I stuff the salad into a whole wheat pita and serve it with a low fat cheese stick on the side. Then again, I think if I put Ranch dressing on a brick she would eat it!

      P.S. I use a vegetable peeler that slices the veggies (carrots, cukes) into juilenne strips. Makes the whole thing easier to stuff into the pita…

    My very picky 26 month old will always eat red pepper hummus on whole wheat pita bread. I cut it with different cookie cutters for more fun….. I would love to have her eat more adventurous things but she won’t have it.. She won’t even eat it if there is shredded carrot in the hummus!

    We have a few favs:

    1) My son LOVES sandwiches with Nutella, marshmallow creme, & sliced banana.

    2) I love open-faced cucumber sandwiches made with sliced cucumbers, cream cheese, & dried dill.

    3) For breakfast, we love grilled bacon & cheese on English muffins.

    4) You can also spread honey on a piece of bread, roll a banana up in it & secure with a toothpick, then fry it in a little butter. Yum!

    5) Warm pita pocket filled with raw veggies & warm nacho cheese dip.

    6) Peanut butter & apple butter on cinnamon-raisin bread.

    1. Cream Cheese as a spread with sliced strawberries
    2. I make a cream cheese and advocado spread, with sliced turkey, cheese and lettuce and tomato (but you can use anything you want)

    Pizza Sandwiches:
    I am a single mom of a 16 month old boy. So we are on a budget. We are vegetarians so I pack his lunch for child care each day. The day after we have spaghetti for dinner I will toast a piece of whole wheat bread or send a pita pocket along with the leftover spaghetti sauce in a small container and another small container for cheese and shredded veggies from our salad the night before. The teacher puts the sauce and veggies on the toast and puts it into the microwave for about 10 seconds. My son loves it! The other kids ask to share his lunch…that’s a good sign.

    Our little guy eats pretty much anything (yes, I know how lucky I am). One of his favorites is take a whole wheat pita put beans in first (I mix it up, but usually use refried) then a veggie, usually a bell pepper or corn or both. Then rice. He loves Spanish rice, but brown rice would work also. He loves eating it like that, but sometimes I but a little ranch on top of the rice or throw it on the George Foreman Grill for a few. We call it his Taco Sammich. My husband and I love them as well!

    My toddler’s current favorite is mashed avocado on wheat. I mash it with a fork, add a dash of salt and pepper, and sometimes cumin or garlic powder. Then the variations are endless to make it different, depending on what is in the fridge – avocado and a slice of tomato, turkey, provolone or swiss cheese, or even hummus.

    My kids LOVE these Ham & Cheese Scones! They are PERFECT to throw in a lunchbox, and they are also wonderfully easy and portable for a quick breakfast. My son is a firm believer that sandwiches are always better with jelly/jam, and the reduced-sugar organic apricot jam from Trader Joe’s is delicious with these. They freeze beautifully for up to 4 weeks, so I usually make a double batch to keep on hand.

    Ham & Cheese Scones

    Ingredients

    * 2 cups all-purpose flour
    * 1 tablespoon baking powder
    * 2 teaspoons sugar
    * 1/4 teaspoon salt
    * 1/4 teaspoon ground red pepper
    * 3 tablespoons chilled butter, cut into small pieces
    * 3/4 cup (3 ounces) shredded extra-sharp cheddar cheese
    * 3/4 cup finely chopped (less-sodium if you can find it) ham (about 3 ounces)
    * 3/4 cup buttermilk
    * 2 large egg whites
    * Cooking spray

    Preparation

    Preheat oven to 400°.

    Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, sugar, salt, and pepper in a large bowl; cut in butter with a pastry blender or work in with your fingertips until mixture resembles coarse meal. Stir in cheese and ham. Combine buttermilk and egg whites, stirring with a whisk. Add to flour mixture, stirring just until moist.

    Turn dough out onto a lightly floured surface; knead lightly 4 to 5 times with floured hands. Pat dough into an 8-inch circle on a baking sheet coated with cooking spray. Cut dough into 8 wedges, and spread out on the sheet. Bake at 400° for 20 minutes or until lightly browned.

    My kid’s favorite sandwich is a redesign of the classic PB&J. I take toasted whole wheat bread, slather on chunky peanut butter, top with sliced bananas and follow with a drizzle of honey. It’s a crunchy, sweet, filling, healthy and gives them sustained energy!

    Roasted Chicken and Cream Cheese

    Since the kids can’t take any nut products at all to school, I struggled to find something that would give them some protein for those long school days.
    I am not a fan of cold cuts which tend to contain preservatives and nitrates.

    This sandwich is one of their favourites and so easy!

    Ingredients:

    Roasted chicken (shredded)
    Favourite cream cheese spread
    Favourite bread

    Using chicken from a whole roasted chicken (either leftover) or even just roasted chicken breasts, shred the meat. Place it on whatever bread your little one likes best. I usually use seven grain. Spread the other side with cream cheese (any flavour you like – strawberry, pineapple herb and garlic, plain) and put the sandwich together.

    You can always add in roasted vegetables, lettuce, whatever you child wants!!! = )

    Use a cookie cutter and cut the sandwich out. The kids love the different designs that they get each day, and the variations in the bread and cream cheese keep the sandwiches changing.

    My son love, love, loves Weelicious Hummus (but I add roasted red peppers to it) rolled on a wheat tortilla with sliced turkey and sometimes we add sliced pickles!

    Our kids’ two favorite are:

    1) Whole grain bread with banana, peanut butter and a drizzle of honey

    2) Whole grain bread with cheddar cheese and bread-and-butter pickles.

    My daughter lover peanut butter and honey and I make it into a roll. I get that bread and flatten it with a rolling pin. Them I cut off the crusts. Spread peanut butter and honey on the bread and roll into a log. She loves it!

    Hands down the favorite sandwich in our house is grilled cheese (made with real cheese) on multigrain bread with cream cheese. The cream cheese pushes the creaminess of the cheese over the top.

    My girls love sliced turkey, a thin layer of hummus, and sliceed avocado on a sandwich thin! I usually let them squuze a wedge of lemon on top before closing, which they think is great fun and provides a great fine-motor activity, as well! :)

    I have been having a hard time with my daughter eating breakfast so one morning decided to do a grilled nutella with banana sandwich…every morning when I ask her what she wants for breakfast she says “maybe nutella with bananas”…

    One of our favorites at the moment is the “hairy” sandwich. We have it for breakfast rather than school lunch, the fun part is making it:
    - a slice of bread (we prefer a crusty whole wheat)
    - a fairly sticky spread (butter, cream cheese, cream cheese with pesto,
    or olives,or whatever flavor you like to add to it, avocado spread, a thick
    hummus, etc.)
    - finely shredded (long and thin) cheese (whichever you like best or fits
    best with each particular spread)
    After spreading a thick layer of the spread on the bread, we place it face down on a plate with the shredded cheese, such that the cheese just sticks to it on its own, making the “hairy” sandwich.

      I should have probably mentioned that toasting the bread first would work better (we usually make these with the crust of warm, fresh baked bread).

    My kiddos love organic cream cheese with smashed bananas, honey or an all fruit jam. It’s easy and a great alternative to the usual fav, pb & j. I make it on whole wheat or some other nutty, whole grain variety. They also love, love, love bean and cheese burritos with avacado on a wrap.

    My 18 month twin boys are very picky, but absolutely love sandwiches. One of our favorites is an eggplant panini. I thinly slice an eggplant (and sometimes zucchini) and grill it with salt and olive oil. I place the slices on whole wheat bread with a large helping of spinach pesto, goat cheese (mozzarella if we are out), roasted red peppers and/or tomatoes. I also try to sneak in a few leaves of baby spinach (though they end up getting picked out most of the time)! I put the whole thing on the grill pan and grill it until the bread gets crispy and the cheese melts. I’ve also made this with hummus and a drizzle of olive oil instead of the pesto. This is one of the few ways I can get the boys to eat vegetables!

    Mexican Pita:
    Whole wheat pita, spread some mashed avacado, salsa, corn and black beeans, sprinkle on some shredded cheddar cheese and he always asks for more!

    J’s Pizza Sandwich (This one might not sound super appetizing, but he LOVES it!)
    Whole wheat english muffin, spread with some pizza sauce, and top with shredded mozzarella, some left over shredded turkey or chicken, peas (yes ma’am, I said peas on pizza) and finely chopped mushroom, season with oregano and parsley, then sprinkle a little more mozzarella to hold it together, top with the other half of the english muffin and stick it in the oven to melt the cheese. Voila!

    Healthy breakfast banana dog! Start with whole wheat hot dog bun, smear natural peanut butter inside, and add a peeled banana. You can sprinkle with some raisins too. (My son doesn’t like it with raisins, but I sure do!). Delicious and portable, and a preschooler can make it themselves with minimal supervision.

    My twins like the the following:

    1/2 cup cubed cooked turkey
    1 chopped, peeled apple
    1/2 cup halved seedless grapes
    1/8 cup mayonnaise
    2 lettuce leaves

    I either make or buy a nice buttermilk bread then thinly spread on a layer of cream cheese on each slice. Then I take some seedless cucumber and roma tomatoes and thinly slice them. One layer of cucumber topped by one layer of tomato then the top slice of bread. I trim the crust and slice the sandwich twice to make it look like the little mini sandwiches at the tea shops. Garnish it with a little mint sprig and my daughter inhales them! They are so refreshing.

    Due to the strict ‘no nut’ policy at school and my daughter’s aversion to meat, it’s always a challenge to get protein in her lunch. I have found that she loves a toasted sandwich with avocado and chickpeas. I spread the avocado across the sandwich like the consistency of peanut butter and then spread chickpeas all over. Sometimes I’ll throw some tomatoes on the side that she can put in herself so things don’t get mushy.

    We have two simple favorite sandwiches.

    The first is a grilled cheese sandwich with or without ham (I don’t always have it on hand!) with shredded carrot, thinkly sliced summer squash, and a sprinkling of fresh spinach. Yum!!

    The second is anything with pesto. I typically will put some type of meat with parmesan cheese, and thinly sliced tomatoes. Other favorite fillings include potato (left over from a gratin), squash, and broccoli. It is similar to a caprese sandwich, but I heat it up and melt the cheese, to try to have the sandwich stay together a bit better.

    My daughter doesnt pack lunch for school b/c her teacher provides amazing meals for her little people. when we are at home, my daughter wants two things: mac-n-cheese and chili. when we break from that, this is what we make-
    mix
    -1 can of tuna fish
    -dash or two of lemon juice
    put on tortilla and cover shredded cheese of choice. lightly grill cheese on tortilla a add a veg if available (shredded carrots, avocado, greens). roll-up and slice and skewer with toothpicks. it makes a nice sized roll that can be fun for everyone to make and eat.

    Easy GRILLED CHEESE with a twist…
    Our 4yr old would eat grilled cheese for every meal. So, we are always looking to jazz it up a bit. Here is a favorite mixture (even good cold): Multi-Grain Sandwich Thins (They are a fun round shape), shredded sharp cheddar and squash puree. Mix 1/3 cup cheese and 2 table spoons squash puree. Spread between slices. Prepare bread and griddle/pan as you would normally, try to cover the sandwich for 2-3 minutes to assist with melting the cheese. Let stand a few minutes to allow cheese to set (it may be a little soft). Delicious served with tomato soup!

I mix up a can of tuna, chopped up artichoke hearts, celery, lemon juice and olive oil and place it on whole wheat. I top it with a bean puree that consists of cannellini beans, a garlic clove, olive oil, juice of a lemon, basil, salt and pepper. The leftover bean spread is great as a dip with veggies!
    The second is an curry apple cheddar sandwich. I mix up a little butter and curry powder and spread it on whole wheat bread. I place apple slices and cheddar on top (and arugula for my oldest) and put it in the panini maker just long enough to melt the cheese.

    Applesauce Sandwich

    spread applesauce on each side and sprinkle with cinnamon and that’s it! Super easy and always gets eaten right up.
    Sometimes i toast the bread so that it doesn’t get too mushy from the applesauce, although my daughter seems to like it that way.

    Panini lovers here! Use a panini press (or stove top via pan/grill) your choice of bread, leftover sliced chicken breast/turkey breast or roasted red peppers, fresh basil, chipotle cheese. Coat both slides of bread with a little butter/olive oil and press/grill until gooey and crisp. Delicious and always requests for seconds!

    Another panini version (if you have calories to spare) is sliced apple & brie with a little honey panini!! Yum…I’m ready for lunch!

    Ok, my easier version of a Monte Cristo. I used left over french toast bread from Sundays breakfast. I spread some Rasberwee sauce inside one slice and some dijion mustard inside the other slice. I put some fresh Boars Head turkey (no preservatives) and some cheese like swiss, then close- that’s it!.

    also my son loves this simple sandwich of grape jelly and strawberry cream cheese. I even try to put some sliced strawberries inside sometimes and he likes that too.

    Egg-cellent open-faced Sandwich
    I cut out a star or heart from the center of a slice of bread…butter the outside frame of the bread, put it in a frying pan to toast. Then crack an egg and put in the center of the bread…flip once the egg sets. You can butter and toast the cutout shape as well!
    A variation: add a slice of cheese to melt and another slice of toast!

    Veggie Muffaleta Wrap!

    -Sautee mushrooms, yellow squash, onion and red bell pepper in a little olive oil. Season with salt, a dash of garlic powder, and a pinch of herbs de provence. (This is probably about a cup of the chopped veggies)
    -In the meantime, have your wrap (I use the whole grain Flat-Out wraps) in the toaster oven with a tablespoon or so or olive salad (I buy mine pre-made, but you can certainly make your own!) getting all toasty and yummy.
    -Once the onions have softened, add 2 tbsp diced tomatoes, and a handfull of spinach to wilt. I take the pan off the burner at this point so my spinach doesn’t get too soggy.
    -Take out your wrap, top it with the yummy veggies, then a slice or two of provolone. To make it extra nummy, I add a tablespoon or two of guacamole (trust me, it MAKES the sandwich). Roll up, cut in half, and DEVOUR!

    Wow! You all have such adventurous eaters. My kiddos, ages 2,4 and 7 are pretty picky. They haven’t realized the difference between spinach and lettuce, so about the most CRAZY we get is sandwich wraps. Usually just a bit of cream cheese, grilled chicken (or pulled chicken) with spinach. Pesto wraps are good too, but again simple…tortilla, chicken, pesto, and some cream cheese. I don’t have too much time in the mornings to make much more than that for my daughter’s school lunch.

    We have two favourites in this house. The first is really simple and may sound weird but all four of us love it. Its a twist on a peanut butter sandwich (or any nut/pea butter would work). I use wholewheat bread, peanut butter, honey, grated cheese (cheddar or mozzarella) and raisins. My husband and I used to eat these sandwiches all the time for a protein kick after a long hike, run etc. and now my kids love them to.

    Our other favourite is a whole wheat bagel cut in two, covered with slices of brie cheese and thinly sliced apple. Drizzle with honey and almond slivers and stick them under the broiler for a few minutes to melt the cheese. Heavenly!

    My son LOVES my sweet potato chicken salad sandwiches! I roast a sweet potato wrapped in foil on the grill until it’s super soft and sweet. I blend it in my magic bullet to puree it and add shredded chicken breast to the mix as well as a dash of cinnamon, cloves, chopped walnuts, and some chopped green apple. I put it on whole wheat bread (or homemade ezekiel bread) and use his cookie cutter of choice to give the sandwich a cute shape. Yum!

    Wrap Tortillas (I used spinach – you can get tomato or herb too)
    Turkey slices
    Cucumber

    Broccoli slaw
    Good seasons Asian Sesame dressing
    Fresh cilantro

    Start with tortilla. I measured 1/8 Tbsp of dressing and spread it on the tortillas. Then I layered 7 slices of turkey Then thin slices of cucumber and mango. Then use kitchen shears to cut cilantro. Then add a bit of broccoli slaw. Add salt and pepper to taste. Roll into a wrap and cut diagonally

    I take 2 whole wheat pancakes, spread natural peanut butter on one. Then top with banana slices, sliced strawberries and blueberries. Sprinkle on a little bit of cinnamon and top with the other pancake!

    Start with a slice of whole wheat bread. Spread some cream cheese on it, then cover that with slices of bananas. Drizzle a little honey on it and then stick it under the broiler or in the toaster oven, just long enough toast the bread and sort of caramelize the bananas. You can add another piece of toasted bread on top, but I like to eat this open faced. So good!

    There us nothing as yummy as pb&j. One of our favorite variations is a french toast pb&j sandwich. Cut 2 slices of your favorite pb&j (or sometimes we do jelly and cream cheese or peanut butter and banana sanwiches). Then dip the outsides in a french toast mixture. (Ours is usually egg, milk and cinnamon. ) Then cook. If you eat it warm be sure to have lots of napkins on hand. Yum!

    One favorite is the “Banana Dog in a Bun” because it’s fun to make.

    1 whole wheat hot dog bun (or similar style bun)
    1 whole banana
    1 TBSP peanut butter (or sometimes we use cream cheese)
    1 TBSP of your favorite (homemade!)jam
    Your choice of raisins, dried cranberries, shredded coconut, chopped peanuts or whatever you can think of!

    The best part is that our daugther loves to decorate her own depending on her mood that day!

    For flavor, our absolute favourite is a Moroccan Chicken Salad sandwich which is chicken breast cut up into small chunks with a mango red onion relish (which we buy from our Farmer’s market), brie cheese, slices of fresh mango (if in season and ripe, or it can be omitted if it’s too much in the sandwich), and a homemade cilantro garlic mayonaise. This is all lovingly placed on your favorite bread (usually sour dough or a focaccia bread) and best when placed in a sandwich press so everything melts together in a smothering, lip smacking, sensation!

    Mmmmmmmmmm… I’m wiping the drool off my chin as I type this!

    Not a traditional sandwich, but more of a wrap. My 6-year old daughter loves turkey-lettuce wraps. She would gladly eat them every day. This recipe makes enough for dinner for our family of 3, and leftovers for a couple of my daughter’s lunches, which she loves.

    Lettuce Wraps

    2 Tbs. olive oil
    1 lb. lean ground turkey
    1 bunch scallions, trimmed to light green part, chopped
    1 stalk celery, trimmed and finely chopped
    1 carrot, peeled and grated
    1 Roma tomato, peeled and chopped fine
    1/2 red bell pepper, chopped fine
    chopped fresh basil, to taste
    pinch thyme
    1/2 tsp. sea salt
    1 Tbs. tamari
    12 Boston lettuce leaves

    Pour olive oil into wok or heavy saute pan, and heat to medium-high. Add ground turkey, scallions, and celery. Cook until meat is no longer pink.

    Add carrot, tomato, pepper, herbs, and salt, and cook until scallions are traslucent, about 6 minutes. Remove from heat.

    Add sesame oil and tamari and mix well.

    Using clean bare hands or large spoon, compact a ball of filling into a lettuce leaf and serve.

    Yields 6 two-wrap servings.

    Marble Rye Bread

    Spread preserves on bread add chicken and brie cheese. Put in Panini grill for a cpl mins until the cheese is slightly melted. Take out of grill, open sandwich and add thinly sliced red onions, and baby spinich. MMMM!

    Roast Turkey, Stuffing and Cranberry Sauce Sandwich

    French Fry Sandwich (actually called a Chip Roll where it originates in my husband’s native England in the local fish and chip shops) – which is buttered bread or a roll stuffed with fries (the chunky kind or crinkle cut work best, not skinny ones) and it’s best sprinkled with a little salt and malt vinegar. I know it sounds horrible and very unhealthy (although I at least used baked organic fries when we occassionally eat this at home), but it’s SO good!

    Three Cheese and Sundried Tomato Panini – a baguette with cheddar, mozzarella and brie cheese topped with a few sundried tomatoes (packed in oil) and then finished with a few basil leaves; toast in a panini maker or just in the toaster oven.

    Chicken and Roasted Vegetable Panini – ciabatta with grilled chicken breast topped with roasted red peppers and eggplant plus fresh mozzarella – toast in panini maker or toaster oven.

    Tomato Sandwich – toasted bread spread with a little mayo and sliced ripe tomatoes (fresh from the garden or farmer’s market is essential) and sprinkled with salt and pepper. This is also excellent with some very thinly sliced Vidalia (or other sweet) onion added.

    I’m making myself hungry! :)

    Since we don’t eat a lot of bread being a gluten free family of 9 (premade is expensive, homemade is a treat), I opt for rice cakes or lettuce wraps for the kids’ school lunches. Lettuce wraps are easy to eat when wrapped in parchment or wax paper!

    Greek Lettuce wrap:
    Bib lettuce, or other “wrappable” lettuce leaves
    Filling:
    1 can of garbanzo beans
    1 cucumber
    1 small can of black olives, chopped
    a hand full of grape tomatoes, sliced in half
    5 oz of feta cheese
    3-4 oz of your favorite dressing, I use Kefir or greek yogurt dressings. Kraft “Green Godess” works well too.

    Mix all of the ingredients together and fill your lettuce leaves. Roll up lettuce wraps, and roll the wraps in wax or parchment so the paper can be peeled down while eating.

    Optional add-ins: sliced turkey and/or alfalfa sprouts.

I spread that on some whole-grain bread, put a piece of provolone cheese or sprinkle some feta on, and grill it on the panini press.     A quick cold sandwich that is a favorite. After a party the refrigerator was full of “adult” food. But this worked!

    Spinach dip (the cold kind) and sliced (rings of) bell peppers (the tiny, sweet and colorful ones). Pumpernickel is a great choice–if your kids like it! My dip is frozen chopped spinach, cream cheese, mayo and sour cream–dill, scallion, garlic, parsley, lemon juice, S&P and chili paste (tiny bit).

    We sometimes add lunch meat and sometimes add sprouts or cucumbers.

    3) almond and flax butter with banana on multigrain bread. even better toasted.

    4) breakfast sandwich- cut out a piece of multigrain bread with a cookie cutter- a heart or something simple. butter and place in hot skillet. whip together (mini cuisinart makes smoother)heaping TB ricotta cheese, a little milk, egg and salt and pepper, and fill in the cutter hole. Flip. Great breakfast to go in the carseat on the way to preschool.

    5) goat cheese with pesto- either basil, sundried tomato, or pumpkin cilantro.
    basil pesto- basil, spinach, pine nuts, olive oil, a tad of garlic, lots of parmesan, salt and pepper.
    sundried tomato pesto- tomatoes, roasted peppers, olive oil,salt and pepper, garlic or
    pumpkin cilantro- roasted pumpkin seeds, cilantro, a little garlic, salt and pepper.

    if your kid is adventurous- thinly slice japanese eggplant, marinate with balsamic, olive oil, garlic, salt, pepper and italian spices for a few hours and grill- and add to sandwich with either basil or sundried tomato pesto. great on olive bread. And grilled shrimp with the cilantro pesto is delicious.

    works well as mini pizza too on a whole grain tortilla.

    My son loves the “Hawaiian Sandwich” as we call it.

    Cream cheese on bread (my son likes Italian bread) with a sprinkle of cinnamon, add some sliced pineapple, and sliced ham. My son prefers fresh pineapple, but if I have to use canned because I don’t have a fresh one available, then I cut those slices in half. Then I throw it in the skillet to warm it up like a grilled cheese. I’ve substituted mayo for the cream cheese, and it’s good, but we like cream cheese better.

    Sometimes I mix it up by mixing crushed pineapple and/or dried cherries with the cream cheese. It’s great with leftover ham instead of sliced deli ham. My husband likes it too and puts some red onion on his. I eat mine with some avocado.

    My favorite sandwich, hands down, is my dad’s homemade authentic Egyptian felafel in a whole wheat pita filled with cubed cucumbers and tomatoes (plain for the kids marinated in olive oil, with salt and pepper for the adults) and crumbled feta cheese with tahini. We make a huge batch of felafel when my father visits and freeze bags and bags of the ground felafel mixture. I just defrost, form them into patties and sauté it whenever I want a felafel fix. I make really small felafel for the kids and use mini pitas. I top mine with chickpeas as well. So unbelievably delicious and packed with protein!

    My daughter refuses to eat any type of sandwich. Therefore I have purchased a product called warm and tote. With this, I should be able to keep my extremely fussy vegetarian 3 year old happy that her food is warm. One of my favorite things to send her with is rice and beans. I switch up and make brown rice or spanish rice. Sometimes I send her with tofu and rice. Recently she added noodles to what she would eat at school. And the lunch bot is on my radar to buy as the metal would keep the food warm longer with the heat pack.     we make a sunbutter hummos. Instead of tahini, we blend in sunbutter. Then we spread it on a wrap with shredded carrots, cucumbers and lettuce and chopped tomatoes and roll it all up together. I then make slices from it so the kids can have it like a finger food.

    When she’s over, my stepdaughter always wants this tuna fish sandwich: tuna (packed in water); smidge of salt, pepper and dijon mustard; diced red or yellow pepper, red onion and celery; mix with just enough mayo to hold it somewhat together. Top with thinly sliced avocado and put between 2 slices of your choice of bread. With the exception of avocado, we always have the other ingredients on hand and my stepdaughter gets to help cut, chop and mix (aka “cook”).

    And for the grown ups, we’ll grill some bread, lightly brush it with olive oil, and top it with a little tuna (mixed with just a touch of mayo, salt & pepper), arugala and roasted red or yellow pepper. (Mom came up with the latter and is based on a tapa she had once — liked it so much she turned it into a sandwich (or very large tapa :) ))

    My kiddo’s current favorite are meat rolls. Take a piece of lunch meat (thicker sliced, thin doesn’t work as well) and spread hummus or guac on it. Then add chopped black olives, tomatoes, and shredded lettuce. Roll and cut into smaller chunks.

    My 2 year old loves when we use pancakes or waffles (his favorite food) as the “bread” and put homemade rhubarb jam and peanut butter as fillings. The nice part is you can add pureed fruits or veggies to the pancakes and waffles (like apples and cinnamon or sweet potato) to add more fruits and veggies to a child’s diet.

    Our little Peach’s favorite sandwich is pretty simple. We take two pieces of organic whole wheat bread and we spread organic cream cheese on both halves. Then, we slice up some organic banana and place the slices on one of the pieces of bread. The, we top it with the other slice of bread. The cream cheese on both slices of bread helps hold the sandwich together. Voila…the perfect cream cheese and banana sandwich, and you can use a butter knife for the whole thing, so she can help. She loves it.

    My husband is from Madrid, so we make a lot of Spanish tortillas (basically a thick egg omelet with potato and onion). Cut a piece for the filling of a sandwich (with or without cheese) and use the rest for snacks or even breakfast!

    I have 2 that do the trick every time. The first is a banana dog. I take a hot dog bun and spread some peanut butter inside, add half a banana (a whole banana usually makes the bun break) and spread some strawberry jelly on top. My boys love it! The second one is our ABC sandwich, which is A for apple butter, B for banana, and C for cream cheese. The little ones love the novelty of it :)

    We also do turkey, ham, or roast beef “rolls” where I cut a stick of cheese and then wrap it in the lunch meat with a tooth pick to hold it together, fun, yummy, and different!

  238. I know this isn’t terribly original, but something I’ve started is a trick my cousin used with his kids. Instead of just peanut butter and jelly, he would make a peanut butter sandwich, cut it into 4 squares, and then put a different topping on each. Like grape jelly on one, bananas on another, etc. So each shape was its own mini-sandwich. His kids were always surprised by what they had next. Our daughter is terrible about eating one square and then getting bored with it. I’m hoping this will resolve that problem!

    We like to make tofu salad. It can be eaten with a spoon or served as a sandwich, with crackers, rolled in tortillas or lettuce leaves. I use a firm tofu in a food processor mix like you would for egg salad. Mayo (I use a vegan mayo) mustard, pickle relish salt pepper, for color, texture and a few added veggies grated carrots and/or greated red bell pepper.

    My kids would eat eggs all day everyday if given the opportunity, so I created a sandwich to utilize the egg obsession.
    Egg & cheese pinwheels/rolls
    Two fried eggs, mozzarella cheese shredded and melted, thinly sliced roasted red peppers,avocado mixed with a little lemon juiceand mayo lightly smeared on a whole grain tortilla. Roll it all up tightly and using a serrated knife, cut into little pinwheels! Very yummy!

    Remember the days of peanut butter and banana sandwiches? Or peanut butter and honey? Or nutella? Those days are long behind us, and the recipe is now changed:

    1/2 – 1 tbl raw honey
    2 tbl raw organic almond butter (or nut butter of choice)
    1/2 tbl cacao
    1/2 tsp mesquite (optional)
    warm it all on the stovetop so that it all melts/mixes together.

    You get a sweet, chocolately/nutty spread that is healthy!! Spread over your favourite bread (with banana slices, optional). I choose sprouted spelt bread.

    • Raw honey provides antioxidants, minerals, vitamins, amino acids, enzymes, carbohydrates, and phytonutrients. It fights bacteria, builds the immune system, and provides energy.
    • Almond butter is an excellent source of monounsaturated fats, and an excellent source of calcium, potassium and magnesium, also a good source of vitamin E and flavonoids

    Strawberry Cream Cheese Quesadilla. Pretty straight forward and deeelish! Whole wheat/grain tortilla, light cream cheese mixed with a little bit of vanilla extract (or almond), or splenda if you want it sweeter. Sliced fresh strawberries. Spread cream cheese on tortilla, top with strawberries, fold over and heat in saute pan until cream cheese is warm. Sooooo yummy. And obviously versatile – you can switch it up with cream cheese and cucumber, even with a little sliced turkey breast. Whatever you would like!

    I find that is I put any fresh fruit or low sugar organic fruit spreads in any sandwiches or wraps my Daughter devours them. We are always keen to stuff in Veggies but fruit works just as well if not better. Plus it opens up your options for sandwich fillings. You can let your imagination run wild. Raw veggies can then be cut with crinkle cutters or in to fun shapes to be eaten with yummy yogurt cheese dips or hummus.

    -Apple butter, cream cheese and ham on kamut bread

    -Flax wraps with almond butter and fresh blueberries inside.

    -thinly sliced strawberries and cashew butter on ezekiel bread

    - a whole peeled banana wrapped in a whole grain wrap with honey and almond butter ( My Daughter calls this a Monkey’s Lunch)

    One of my favorite, yet simple, sandwiches to make is smoked Gouda, thinly sliced granny smith apples, and turkey layered between sourdough (or your favorite) bread.     My daughter LOVES spaghetti squash with tomato sauce, to which I normally add in some carrots grated carrots and zucchini for an extra serving of veggies. The next day, (if we have leftovers!)     My 3 year old son, Gunnar, attends pre school every Monday, Wednesday, and Friday where he is required to bring his own cold lunch. So I have gotten pretty crafty with sandwiches, there are two that he loves, I know this because his little wonderbread sandwich container always comes home empty.

    Grilled cream cheese with fruit on whole grain cinnamon raisin bread. I use any fruit I have on hand usually blueberries or strawberries and I mash them up with a fork in a bowl. Then I add cream cheese to the mix until it is all incorporated and smooth. Then I spread it between the raisin bread and grill it on our panini grill until the bread is just warm. It’s reall great! Then I use the leftover as toast spread for husband and I.

    Grilled brie with fig preserves on any crusty bread. I slice the brie to perfect sandwich size and coat both pieces of bread with the fig preserves. Then grill it on my panini grill until warm and the cheese begins to melt.

    Delicious!

    My 4 yr. old and 17 month old both LOVE tuna sandwiches so I make them a very healthy version which includes hardbolied eggs chopped into small pieces as well as avocado also chopped up. This way you only need a little bit of mayo/plain yogurt. Serve on 7 grain rolls. Yum!!

    Well a go to here is a little something when we have left over crock pot chicken (can be other meats too but Crock pot chicken is the best IMO) You take the chicken and shred/grind it up with some pesto. Take a cheddar (cheese of your choice or what is on hand) and place it between two tortillas then heat until the cheese melts. Really Big hit here, my 2 year old loves it and my 6 year old is the envy at school when he takes it for lunch.

    My LO is a big fan of avocado so we do a grilled cheese with avocado on flatbread.

    I layer cheddar cheese the avocado (sometimes I will mash black beans into the avocado) then another layer of cheddar cheese. I grill it in olive oil until the cheese is melted and the bread is crispy. The great thing is that you can throw it in the diaper bag and it is still yummy an hour later if you are out and about.

    We use toasted whole grain bread, nutella, sometimes a sprinkle of wheat germ or ground flax seed, and thinly sliced bananas then another layer of nutella.

    Chicken Pineapple Sandwich

    1 skinless, boneless chicken breast halves – pounded to 1/4 inch thickness
    2 tablespoons and 2 teaspoons Hawaiian style marinade
    1 pineapple rings
    1 slice provolone cheese
    1 onion rolls, split
    1 tablespoon thousand island salad dressing
    1 leaf romaine lettuce
    1 slice tomato

    1. Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.
    2. Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.
    3. Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.
    4. To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.

    My son is 18 mon and sometimes he will only eat a cheese sandwich. I use Ezekiel bread. So I know he’s getting a complete protein from the bread as well as the organic cheese. I smear a mixed veggie puree in between the two slices of cheese and pop it in the toaster oven. My puree has green beans, zucchini, yellow squash, and spinach in it.
    Even if my son won’t eat a single vegetable, I can count on him eating a veggie cheese sandwich.

    A “waffle sandwich” made with almond butter, a sprinkling of cinnamon, a touch of honey, and then grated carrots in between two pieces of whole wheat bread. Then “toasted” in a waffle iron. Sometimes I’ll press some raisins, or dried blueberries into the waffle squares.

    Like many others have already mentioned, we use are waffle iron too!

    We make two waffles but before they’re completely done, we put things on top of one waffle, put the 2nd waffle on top and lower the lid (doesn’t close all the way) and heat whatever we put in there. One variety is to add fruits. We smear a bit of nutella on the bottom waffle, slice a banana thin, lay it on the nutella and then slice a couple strawberries and lay them flat then put top waffle on and cook a bit longer. YUM!!

    We also do waffle sandwiches. Here are a few of my 6 year old son’s favorite, and mine too.
    Waffie with goat cheese and sundried tomatoes
    Waffle with nutella and bananas with a little sweet cream
    Waffle with lemon curd and berries

    We put the filling inside and fold it up like a sandwich.
    Good for breakfast or lunch & dinner
    I am hungry now….

      YUM indeed! My son loves to eat something like this too. Sometimes he uses a thin slice of provolone, with a slice of turkey on top and rolls them around the apples. And sometimes we add dried cranberries to that too. The other roll that he made up when he was about 3 and is still a favorite is a slice of provolone, a slice of turkey and in the middle sliced olives and oatmeal. He rolls it and devours it. I would have never thought of that combination, but he eats olives and oatmeal with just about anything.

    My 14 month old is a fan of his favorite home made applesauce in a grilled sandwich. Spread about 2 tablespoons of applesauce on your favorite bread and grill like you would a grill cheese.

    My six year old loves meatball subs! We slice up some homemade turkey meatballs(with spinach!), put it in a wheat hoagie roll, smother it with mozzerella and tomato sauce. We usually throw it in the oven for a few minutes to toast the bread and melt the cheese. She’ll even eat them cold!

    Recently I made a pizza roll up that my boys really liked, even my 9 year old ate all of it (and that’s not normal). Spread pizza sauce on a whole wheat tortilla, sprinkle with baby spinach, then turkey pepperoni, then mozzarella cheese and put in microwave for about 20 seconds or until cheese is melty. Let is sit for a few minutes before rolling up and slicing into sushi sized rolls.

    Take fresh whole grain seeded wheat or sourdough bread
    On one side spread honey mustard. On the other side spread hummus. In the middle, pile up sliced apples, slices of cheese (havarti, jack, cheddar, all delish) and avocado.

    It’s a complete meal – grains, fruit, vegetables, legumes, and dairy. And you’ll love snacking on all the ingredients as you put it together! Enjoy!!

    Pesto Chicken Panini

    This is my kids FAVORITE sandwich! They even love it cold in their lunch box.

    Whole wheat bread
    Homemade spinach-basil pesto(see recipe below)
    chicken ,sliced
    roasted red pepper, sliced
    provolone cheese

    Spread each side of the bread with pesto, then layer one piece of provolone cheese, chicken slices red pepper slices then top with one more piece of cheese top with bread slice. Spritz grill pan with olive oil grill on each side until cheese is melted, press down with panini press or spatula. Enjoy!

    Spinach-Basil Pesto
    2 cups baby spinach leaves
    3/4 cup fresh basil leaves
    1/2 cup walnuts
    1/2 cup grated Parmesan cheese
    4 cloves garlic, peeled and quartered
    3/4 teaspoon kosher salt
    1/2 teaspoon freshly ground black pepper
    1 tablespoon fresh lemon juice
    1/2 teaspoon lemon zest
    1/2 cup extra-virgin olive oil
    Directions
    1.Blend the spinach, basil, walnuts, Parmesan cheese, garlic, salt, pepper, lemon juice, lemon zest, and olive oil in a food processor until smooth, scraping the sides of the bowl with a spatula as necessary. Freeze in ice cube trays, then pop out and put in freezer bags for 4-6 months

    My boys have two sandwiches that they enjoy. One is nutella and bananas on homemade honey oatmeal bread. The other is a chicken wrap. I make homemade sandwich flatbread and then put chicken strips, cheddar cheese, shredded carrots, julienned peppers and a little ranch dressing in it, fold it over and they enjoy!

    My son’s favorite are spring roll wraps. He didn’t like bread for a long time, so I had to get creative. In comes rice paper wrappers. Prepare:
    1. Rice noodles
    2. butter lettuce
    3. thinly sliced red pepper
    4. thinly sliced cucumber – we like persian. Cut lenghwise
    5. halve meatballs – we like Bruce Aidells’ teriyaki pineapple chicken meatballs
    6. Rice paper wrappers

    To make, wet wrappers with warm water to soften. I like to start with butter lettuce, noodles, red pepper, cucumber and then 3 meatball halves. Carefully roll up.

    My son loves cream cheese and olive sandwiches!

    2 slices of wheat bread
    3 tbs low fat cream cheese
    4 diced green olives

    Mix the olives into the cream cheese, spread on the bread and grill it up in a pan with a tsp of butter, slice and pack it for later… Yum!

    My 2 year old does much better with wraps than sandwiches because sandwiches with bread are usually too thick and fall apart too easily. Our favourite wrap these days is a sundried tomato tortilla filled with:

    * Light smear of organic mayo
    * Tuna, salmon or veggie ground round (we are pescetarian)
    * Romaine lettuce
    * Cucumber
    * Avocado
    * Baby spinach
    * Dash of balsamic salad dressing
    * Sometimes shredded cheese.

    To mine I also add tomato and bell peppers, but DS’s skin is sensitive to those so he only gets them as a treat occasionally, when his skin is doing well. I chop the veggies up small (including the lettuce and spinach) so he doesn’t have to bite chunks out of them and that ensures he will actually eat them instead of picking out the big pieces and putting them aside.

    This is our “sunshine sandwich”. Buy organic sunshine burgers found at most grocery stores. There is many flavors to chose from, south west, barbaque, and original. They are soy and gluten free.
    Heat the burger, slice or chop it up. Place it in a wrap and add an all natural barbaque sauce. You can also use hummus as a sauce. Rap it up and eat.

    These are all wonderful ideas but i have a dilemma. My 18 mo old daughter isn’t big on bread or torillas, even when cut up into small pieces (such as in a quesidilla) so what are alternatives to a traditional sandwhich since she will not eat them but only finger foods or be fed something from a spook or fork? (she can feed herself with a ford but doesn’t have finesse to load it all th etime or hold a spoon level before the contents land in her lap or floor. Perhaps it’s my fault from making sure food makes it to her mouth so she isn’t starving, but also she hasn’t “HAD” to learn…I know this sounds pathetic of me, but she does to daycare full time since I work so my options for lunch are getting limited (I’ve made all the meatballs, veggie and meat burgers as well as EVERY finger food on this and everyother website known to man she can take!!!) I even still make batches of beef stew and ground beef, basmati rice and tomatoes just to make sure she’s well covered for dinner so it’s not because she doesn’t have options or that I’m lazy. To the contrary, I don’t give her anything with preservatives or junkfood; I make everythign from scratch ahead of time. Suggestions please…I’m exhausted and out of ideas. Thank you.

    we do whole grain whole wheat bread with cashew or almond butter sprinkled with finely chopped kale or spinach, a mixture of flax, hemp, and sunflower seeds (coffee grinder and i keep it in the fridge to throw on salads and smoothies etc) and a drizzle of honey or agave. he loves them ;p i’ve also put fresh fruit instead of agave for sweetener. sliced apples really thin are awesome.
