Fruit on the Bottom Tapioca

There's something about tapioca pudding that seems so kid-like to me. Not that adults don't also love this creamy, coconut flavored pudding, but the act of plunging your spoon deep down into the bottom of the cup and pulling up some sweet, juicy strawberries to accompany the tapioca on top -- all in the same bite -- carries with it an anticipation that I associate almost completely with how excited I used to get as a kid to savor my desserts. This dish irresistable to me. In fact, typing this is making me so hungry I think I need to stop and have some! I guess I'm still just a kid at heart.

Fruit on the Bottom Tapioca  (Serves 4)

  • Prep Time:5 minutes,
  • Cook Time: 25 minutes,
  • Total Time: 30 minutes,

Ingredients

  • 1 cup strawberries, stemmed and chopped fine
  • 1 13 oz can unsweetened coconut milk, about 1 3/4 cups
  • 3/4 cups water
  • 1/3 cup tapioca (not quick cooking)
  • 3 tablespoons sugar

Preparation

  1. 1. Bring the coconut milk, water and tapioca to a boil.
  2. 2. Reduce to a low simmer and cook uncovered for 20 minutes, stirring occasionally.
  3. 3. Add the sugar and cook for another 5 minutes.
  4. 4. Divide the chopped strawberries between 4 glass cups and pour tapioca over the strawberries.
  5. 5. Chill for one hour and serve.

    Did this with fresh ripe mango. My family won’t eat it, but I loved it, and I passed this on to my brother, who always complains that desserts are too sweet.

    Thank you so much for this recipe! I just started on a 4 day rotation diet due to food intolerances. Tapioca is the only starch I can have on day one and I was clueless as what to do with it. Luckily coconut was on my list for day one as well. Unfortunately strawberries were not :( I had it for breakfast and topped it with some sliced banana and some cashews. It was delicious! This is definitely going to be a staple for me ;)

    I’ve had tapioca in my pantry, perfect! … I can’t wait to try this. probably with peaches, though. our farmer’s market hasn’t had strawberries for over a month :(

    I made this last night – I love tapioca!! My kids did not like it……..
    But I did
    I have 2 questions
    when I poured the warm tapioca over the berries it went down around the berries and I did not get the beautiful “look” you had. How did you get the tapioca to sit on top of the berries like that?

    did you presoak your tapioca before cooking it?? My mom always soaked tapioca overnight before cooking it……….

    How delicious…I love Tapioca! Thanks again Catherine for such great recipes. My kids have never eaten Tapioca (sad, I have tried with no success) but with the strawberries they may change their minds about it.

    YUM! I am making this after I go buy strawberries! Soooo… how come the pic shows the strawberries in a syrup versus fresh strawberries? Catherine – did you macerate (is that the word?) the berries in sugar? Or did it get syrupy after an hour in the fridge with the pudding on top?

      My strawberries were really juicy, so I just chopped them fine and put them in the glasses. Nothing better then a sweet, fresh strawberry!

      Tapioca is suprisingly egg free. The powder is actually quite often used as an egg subsitute.

    I have never had cold tapioca before! My mum always used to give it to me hot, and I’m sure she never used coconut milk…

    Catherine I think there might be a typo and/or ingredient missing on the list of ingredients (unless it’s too early in the morning and my eyes are playing tricks).

      What seems missing? I have never made tapioca before. Maybe you are noticing something I don’t. I want to make it right though.

    Yum, that looks so good. I have some freshly picked strawberries at home, I think I will make this for dessert tonight!
