I guarantee these Pancake Sausage Muffins on a Stick are about to become a family favorite in your household. I think my kids would have these every single day if they could!

I’m one of those people who believes that everything tastes better on a stick. Be it Popsicles, Chicken on a StickPeas in a Pop….there’s just something about food with a handle that says, “I’m telling you, you want to pick me up and find out just how delicious I am”. Or something like that.

When I presented Kenya and Chloe with a glass filled with an arrangement of these Pancake Sausage Muffins on a Stick for breakfast one recent morning, both of their eyes were as wide as saucers. Kenya plucked one out and meticulously dipped it in his dish of syrup prior to each bite while Chloe tore into three at the same time, first pulling out the sausages to eat, then bathing the gutted pancake muffins in syrup before stuffing her little mouth with them.

And, they’re not only good for breakfast! These muffins make a great accompaniment to any gathering. They look fun and enticing and can be paired with any sauce you’d like. 

This dish will probably take you less time to make than a platter of pancakes with sautéed sausage on the side — and the fun factor is definitely way higher. Just ask your kids, who I guarantee will agree with me that everything indeed tastes better on a stick!

Pancake Sausage Muffins on a Stick

Ingredients  

  • 2 cups of favorite pancakes batter
  • 6 breakfast sausage links, cooked

Instructions 

  • Preheat oven to 350 degrees.
  • Place 1 tbsp of the pancake batter into greased mini muffin cups.
  • Cut the sausage into 1 inch pieces and lay flat side down in the center of each batter filled muffin cup.
  • Top sausage with another tbsp of batter in each cup.
  • Bake for 14 minutes.
  • Remove muffins from molds and poke popsicle sticks through the muffins.
  • Serve with desired accompaniment.

  1. Yes! Freeze in a single layer for about 30 minutes, then transfer to a freezer safe container for up to 4 months!

  2. I just made these, and the boys gobbled them up! Can you freeze these to reheat on busy mornings?

  3. The kids were completely mezmerized as I was making these. 🙂 They had them for a snack and the next day for breakfast; my husband managed to snag a few, too, before they were all gone!

  4. The family loved these, especially the kids. They took a lot longer to make than expected, though, so I’d definitely save these for a weekend breakfast or morning snack.

  5. I like to heat them up a few at a time in the toaster oven! The regular oven will work, too, for larger batches! 350 until warm, about 5-10 minutes!

  8. I made these this morning for my neighbor who just had her third baby. I used tiny appetizer forks instead of sticks and called them “piglets in a swaddle” – they were a huge hit with her older kids (2 and 4) as well as her parents who are in town.

  9. I bet these would be yummy with a little maple syrup mixed into the pancake batter (instead of dipping). I can’t wait to try them! My 3yo is recently obsessed with sausage so I know they’ll be a big hit.

  10. I make these for my 19-mo old son often, no sticks. Sometimes he nibbles through the whole thing using both hands, very cute. But more often he just rips open and discards the pancake to get to the sausage piece inside!

  12. What a creative idea! Someone mentioned fruit. I’ve tried pancake bites with pumpkin pancake batter and a sliced banana in the middle. TRY THE BANANA with this. The heat gives the banana a roasty toasty flavor that is to die for. Choc chips as someone else mentioned would also be great with the banana combo. Yum-my!!

  13. Just made these this morning and they’re even better than regular pancakes! They came out really fluffy and although they didn’t perfectly hold to the stick, my son was mesmerized by them and ate a whole buch. I didn’t have sausage so I used deli ham. Delicious!

  15. I made these yesterday. Yum! I wonder if you could do different variations. Perhaps fill them with bacon crumbles, chocolate chips, lemon zest and juice,etc.

    care for it too much. However my wife bought a Pasta machine
    with the idea of making the home made variety. My opinion of

  22. I just made baked corn dog mini muffins last weekend and my son loves them! My recipe made 30 muffins and I froze them. For my son’s kindergarten snack, I just pull three out of the freezer and send a little container of mustard or ketchup for dipping. By snack time in the afternoon, the little muffins have thawed perfectly.

  24. You can freeze a large majority of homemade food. This is a great idea. I cant wait to try corn dogs like this for the kids. They love corn bread and hot dogs so it would be a great match.
