From the first bites of food I offered my kids when they were babies, sweet potatoes were always a favorite. My son would eat an entire sweet potato if I handed it to him. Being that their tiny little hands couldn't hold the whole thing up, mashed sweet potatoes seem like a much better choice.

In my quest to find new ingredients to tempt their taste buds I realized that he hadn't tried coconut milk. Sweet and creamy, it adds body and depth to the puree. Add a touch of cinnamon, pop it in the Babycook to puree until smooth. Yummy delicious and nutritious for your wee one!

Sweet Potato Coconut Puree

  • Prep Time:2 minutes,
  • Cook Time: 1 hours,
  • Total Time: 1 hours,

Ingredients

  • 2 medium sweet potatoes, washed
  • 1/3 cup canned coconut milk (light or full fat)
  • 1 teaspoon ground cinnamon

Preparation

  1. 1. Preheat the oven to 400
  2. 2. Poke several holes in the sweet potatoes with a fork
  3. 3. Bake the sweet potatoes for 1 hour, (I put them on a piece of tin foil so they don\\'t drip all over the oven.
  4. 4. When the sweet potatoes are cool to the touch, peel off the skin. Add the flesh to a food processor with the coconut milk and cinnamon.
  5. 5. Puree until smooth.
  6. 6. Cool before serving.
  7. * Place in Baby Cubes and freeze for future feedings.

    I LOVE giggle and Beaba! Our sweet girl is 3 months old and will be ready to eat food soon. We’ll be getting the Stokke high chair and the Babycook and making lots of weelicious recipes : )

    We bought our Babycook at giggle and LOVE it. We use it constantly and our baby girl gobbles up her purees. We are in desperate need for toys for 9-12 month old and some gear for when we start table foods!
