Spiced Carrot Cauliflower Soup Video: New Year New You

I've made a major resolution for 2013: New Year, New Me. By that I mean that I'm going to get off my buns and make some positive efforts with my health. Between family commitments and the release of my first book I neglected exercise completely last year. Forget the physical aspect of exercising, the mental and emotional benefits are the things I truly missed most.

I'm also always trying to eat better than the day before and this delicious and filling soup fits the bill whenever I am hungry. Aside from the fact that it's chock full of aromatic spices and good-for-you vegetables, my kids just adore it.

Make the decision that this year (or at least tomorrow) is all about you and start things off by making a batch of this heartwarming soup!

    Hello from frosty Scotland! I made this for my husband who has just started a New Year diet. He absolutely loved it. I have tried and failed with many carrot soups (my husband works for a carrot supplier!) and the flavour, consistency, colour and taste of this soup really impressed him. Have yet to persuade my 5 year old daughter to try it but I won’t give up on that! Thank you so much for restoring our faith in vegetable soup! x

    I didn’t have any bullion, so I used 5 cups of vegetable broth. I’m not sure how it would have tasted with the bullion, but the soup was AMAZING. So easy, and such a nice flavor change-up to our regular meal selection. Thank you!

    I had tons of carrots and a head of cauliflower that needed to get used ASAP- This recipe is perfect and simmering now as I speak! Can’t wait to taste it!

    I’m not gonna lie, I saw this recipe while in a meeting, got home, flipped on the video and made the soup, then made my “quick challah” for grilled cheese to go along with it for dinner. This is the best soup ever, what a great change from tomato soup with a similar consistency! Thanks Catherine!

    Looks so good. I’m trying to use my new kitchen toy–the VitaMix blender–as much as possible because it will make hot soups for me! Do you know I would modify your recipe to use my VitaMix? Can I cook it in the VitaMix or just use it at the blending phase? Either way looks yummy.
