Mermaid Deep Sea PunchPin

There’s nothing more magical than watching a child read a book they love over and over again. I cherish getting in bed with the kids at night and devouring piles of books, especially the ones that really transport them to another world and captivate their imaginations. That’s how we felt the first time we read Last Night I Swam with a Mermaid, a magical tale written by my sweet, brilliant friend Kimberly Muller and photographed by her talented husband, Michael. Together they bring to life the tale of a little girl who’s taken on a magical ocean journey by a beautiful mermaid. My kids now ask me to read it to them constantly.

In honor of this incredible book and all the other amazing work the Mullers do to educate families about Earth Day, I created a bright, dye-free, sea-blue fruit punch so that the whole family can celebrate our planet with a refreshing spring cocktail. Feel free to jazz it up with an extra little somethin’ somethin’ for the adults, but either way it’s the perfect way for everyone to raise their glasses to our incredible planet.

Mermaid Deep Sea Punch

Ingredients  

  • 2 cups water
  • 1 cup frozen blueberries, defrosted
  • 1/2 cup lemon juice
  • 2 teaspoons honey

Instructions 

  • Place all the ingredients in a blender and pulse until smooth.
  • Strain into drinking glass and serve iced.

  8. WOW. 1/2 cup of lemon juice seems like a lot considering the rest of the ingredients. Is this drink suppose to be on the bitter side? Thanks
