How to Make Gluten-Free Apple Ring PB&J

If you or your child has a gluten allergy you know how frustrating and challenging the midday meal can be. With so many lunchtime recipes focused on sandwiches and what you can put in them, what do you do if you can't eat the bread?

My kids have been dipping apple wedges in peanut butter for years, but it wasn't till Kenya started using the apple corer and then slicing his apples into rings that I had the idea for this bread-free sandwich. But how do you prevent the apple slices from turning brown? Watch this video to find out how.     What a neat idea! I’ve been wondering how to do PB&J besides on corn tortillas for my ADHD child who is gluten intolerant. Sometimes for breakfast we have sliced apples with peanut butter for dipping. I really like this lunch idea.

    We’ve tried this before with just PB, but adding the jelly just made it super messy! My 1st grader prefers to pack apple slices with the PBJ mix in a separate container for dipping.
