Do you know Lisa Leake? If you don't know her by name, I bet you know her site 100 Days of Real Food. It's down right awesome. In 2010, Lisa, her husband Jason, and their two sweet daughters took a pledge to go for 100 days without processed food. That's right, they quit cold turkey. You may think that sounds easy, but I happily dare anyone to give it a try.

As Lisa's family's eating habits changed, she began creating an abundance of delicious wholesome recipes. When she was in California a few weeks ago, Lisa dropped by my kitchen for a few hugs and to whip up a batch of her delectable Whole Pumpkin Spelt Muffins with me. I was so honored to have her in my kitchen and I can't wait to get my mitts on a copy of her new cookbook which comes out next year. Check out me and Lisa makin' muffins right here!

I Love both of your sites. I make these often for my boys. They love having them in their lunch boxes. I had some spelt berries and decided to grind them up myself in the vitamix and now have spelt flour. Awesome to see you 2 together. THank you for your videos

I can’t wait to try these! Just wondering how you go about defrosting them for school lunch if you freeze.
    Thanks!

I let them defrost in the fridge overnight! You can reheat in the microwave or toaster oven!

Thanks for letting us peek in your kitchen! Muffins are so easy to make and so adaptable! You could even add some melted chocolate swirls for more of a “dessert” treat.

I have been making these muffins from Lisa’s website for a while now and they are amazing. My husband doesn’t like muffins and he actually will request that I make these for him. They are so light and fluffy. Now I use spelt flour for other things too. A must try really!!!
