In my commitment to starting some new Thanksgiving mealtime traditions I've been playing around with classic recipes. Sweet Potatoes in Orange Cups is my all-time favorite, but this vegan and gluten free Whipped Coconut Sweet Potatoes side dish is quickly rolling into second place. Being a kid at heart, the marshmallow topping is what makes the first place classic my fave. My hubby however thinks that marshmallows melted on top of sweet potatoes is a gross concept and won't eat them. I came up with these vegan whipped sweet potatoes as a compromise to make everyone happy. Made with coconut milk and dried coconut sprinkled on top like a light dusting of snow, this dish went over big when I tested it out with my fam, who deemed it perfect for our upcoming, massive Thanksgiving feast. Don't be put off by the fact they are vegan, no one will ever know the difference.
