There are some vegetables that look down right intimidating. Celery root (also known as celeriac) is one of them. When you see one, the first question you will ask yourself is what do I do with that?! But you’d be hard pressed to find a more flavorful vegetable, so it’s well worth learning how to prepare one to cook. I know I’m not doing the best job of selling this. Over 10 years ago I was hiking with my friend Alex, who at the time was a very successful private chef. Alex was always having to create healthy recipes for her clients and one of her favorite ingredients to use was celery root. Up to that point I had only cooked with celery root once or twice, so I had no idea about all of the incredible dishes it could be used to create. She described to me making a pureed celery root dish similar to mashed potatoes, with a creamy texture and mild celery flavor.

A half cup serving of celery root has around 40 calories to boot, making it a really low fat and carb root vegetable as well. Over the years I’ve used it in recipes like Celery Root Soup (fun to serve in shot glasses at parties) and Celery Root and Potato Puree for my kids when they were babies trying out new foods.

  1. You are so right! I would have never (ever!) picked celery root out of a produce line-up but now I’m excited to try it! Maybe it will even become my new veggie to cook with 🙂
