  • Plain or vanilla yogurt
  • Raspberries (fresh or frozen)
  • Mango chunks (fresh or frozen)
  • Pineapple chunks (fresh or frozen)
  • Fresh spinach
  • Blueberries (fresh or frozen)
  • Blackberries (fresh or frozen)
  • Açaí package

How to Make Rainbow Yogurt Popsicles

  1. Red Layer: Place raspberries and 1/2 cup yogurt in blender and puree until smooth. Divide evenly between 12 large popsicle molds and freeze for 5-10 minutes.
  2. Orange Layer: Place mango and 1/2 cup yogurt in blender and puree until smooth. Pour on top of raspberry mixture in popsicle molds, and freeze for 5-10 minutes.
  3. Yellow Layer: Place pineapple and 1/2 cup yogurt in blender and puree until smooth. Pour on top of mango mixture in popsicle molds, and freeze for 5-10 minutes.
  4. Green Layer: Place spinach and 3/4 cup yogurt in blender and puree until smooth. Pour on top of pineapple mixture in popsicle molds, and freeze for 5-10 minutes.
  5. Blue Layer: Place blueberries and 1/2 cup yogurt in blender and puree until smooth. Pour on top of spinach mixture in popsicle molds, and freeze for 5-10 minutes.
  6. Purple Layer: Place blackberries, açaí and 1/4 cup yogurt in blender and puree until smooth. Pour on top of blueberry mixture in popsicle molds, and freeze for 5-10 minutes.
  7. Finish the Popsicles: Place popsicle sticks in molds and freeze overnight.

Tips for Perfect Rainbow Yogurt Popsicles

  • To ensure the layers of color don’t bleed into each other, make sure that each layer is frozen before pouring the next layer on top. At least 5-10 minutes in the freezer for each layer should be perfect.
  • You can use a spoon to place the mixtures into the popsicles, but I’ve found that pouring the mixtures into a measuring cup with a spout and using that to pour into the molds gives you more control.
  • As you add more layers, it can sometimes be challenging to place the popsicle sticks into the molds through the other frozen layers. I will use a small paring knife to make a slit to stick the popsicle sticks into. You might need to use your muscles if they freeze too solid!
  • When you’re ready to eat a popsicle, run the mold under some warm water to help loosen the cover from the popsicle!

  • 1 3.53 ounce pack acai, defrosted
