You wanna know a secret about me? I love transforming food. It's basically the mad scientist in me. There's truly nothing more fun and playful than taking a whole food like a fruit or vegetable and transforming it into something totally different and unique. It's part of the reason I started Weelicious in the first place and this Shaved Vegetable Salad is a perfect example.
Some kids (and adults for that matter) just don't like certain vegetables. Time and time again, though I'm happily surprised when I take a less than loved vegetable and turn it into something the kids love. Chloe is a perfect example. For the longest time she vowed that she hated radishes, but when I shaved them through this mandoline, drizzled the slices with olive oil, a squeeze of lemon juice and a sprinkle of salt she would eat a plate full. The same goes for Kenya when it comes to carrot. He's never been the biggest fan, but in this Shaved Vegetable Salad he will gobble them up.
You can cruise through Weelicious to see other ways to do this with perfect examples like baking kale to make crispy Kale Chips, roasting broccoli to make it tender and golden, making a pasta sauce with Carrots and Ginger or adding a bunch of green vegetables into Green Veggie Pancakes, it's all about how you transform them!
This "recipe" only takes minutes, but is also a ton of fun to eat. You can drizzle any dressing over the top, serve it on the side or even eat the ribbons of vegetables on their own! If you make your own version of Shaved Vegetable Salad be sure to share it and tag @Weelicious, so I can see your creation!
