Sweet, creamy, beautiful, delicious… there are so many words to describe these little edible jewels filled with silky puree. These bites are easy to pick up with your fingers and look gorgeous on a platter. You could even serve these at a fabulous cocktail party and make extras for the kids.
But back to the recipe. Purses?? Huh? Well, I found some gorgeous gala apples at the farmer’s market and was trying to think a fun and original recipe for a birthday party. I had also kept passing wonton wrappers at the market and wanted to play around with them. Apples are full of fiber and vitamin C and sweet potatoes are a powerhouse of nutrition especially given their abundance of beta-carotene and vitamin C and E.
These only took minutes to prepare and you can serve them warm or cool. You could also serve the puree on its own to babies over the age of 8 months.
Of course Kenya ate almost the entire recipe in one sitting (that seems to be the norm with him these days), so I highly recommend making a double batch!
Sweet Potato, Apple, Cheddar Purses (Makes 10 purses)
1/2 Sweet Potato (yams), peeled and cubed
1 Small Apple (about 1/2 Cup), peeled and cubed
2 Tbsp Cheddar Cheese, shredded
1/8 Tsp Cinnamon
10 Wonton Wrappers (found in the refrigerator section of your grocery)
*Bowl of water
1. Place the sweet potatoes in a steamer pot over boiling water and cook for 3 minutes.
2. Add the apples and continue to cook another 3 minutes or until fork tender.
3. Place the apples, sweet potato, cheese and cinnamon in a food
processor and puree until smooth.
4. Bring a large pot of water to a boil.
5. Place a wonton wrapper on a clean surface. Place a tablespoon of the puree in the middle of the wonton.
6. Take the four corners of the wonton and lift them up around the
puree.
7. Pinch the wonton together in the middle, just over the puree, to seal. Moisten your fingers with a little water and pinch once more to ensure a good seal.
8. Repeat process with remaining wonton wrappers. When all 10 are formed into purses, place 3-5 at a time in the boiling water.
9. Cook for 2 minutes.
10. Remove with a slotted spoon to a plate, cool and serve.

Good for the heart, good for the soul….good when everyone in our household has been sick for 6 days straight! Poor little Kenya got a bronchial infection at one of the kid play spaces (a.k.a “germ factories”) I take him to and within days everyone in our house was down for the count. Since there’s little you can do medicinally for kids Kenya’s age, out came my homemade ginger-lemon-honey tea (I’ll post this drink recipe tomorrow) and my personal favorite, chicken noodle soup.
Almost nothing seems to taste good when you’re sick, but there’s something about chicken noodle soup that always makes you feel better. For years doctors have deemed it medicinal and I have to agree. I always considered my recipe for chicken soup fast, easy and fresh, but I became a true pro at making it day after day this week to feed my “patients”. Chocked full of carrots, celery and leeks, I got smart this time and made a huge batch for the freezer for the next time we’re all down for the count.
Chicken Noodle Soup (Make 12 Toddler Servings)
32 Oz Chicken Stock, preferably low sodium
2 Carrots or 3/4 Cup, chopped
1 Celery Stalk or 1/3 Cup, chopped
1 Leek or 3/4 Cup, halved and sliced thin
1 Large Chicken Breast
2 Tsp. Vegit
3/4 Cup Fine Egg Noodles
1. Heat chicken stock in a large pot over a high heat and bring to a simmer.
2. Add the carrots, celery, leeks, chicken breast and vegit. Cook for 12 minutes.
3. Remove the chicken breast and cool. Then tear or chop into bite size pieces.
4. Add the egg noodles to the broth and cook for 6 minutes.
5. Add the chicken to the soup.
6. Cool for little ones and serve.

I’m always shocked to find out how many people know of and adore noodle
kugel. I only tried it for the first time recently, but when I shared
my feelings about how much I loved it with friends, I got some pretty darn
passionate responses about what a recipe for noodle kugel MUST include. The variations made my head spin. Some people said nuts were a must. Others cited raisins, cinnamon and all kinds of other additions.
When I was originally doing research on kugels and their history, I
was shocked to find that most recipes called for a cup or more sugar. That much
sugar would send me into outer-space, so I can only imagine what it
would do to our kids.
My version is a much healthier toddler-and-family-friendly recipe that
you could eat as a side dish or even for dessert! After it comes out of the
oven, cut it into squares and take a bite of the soft, tender, creamy
noodles perfumed with cinnamon — you’re in heaven. Of
course Kenya tried to shove the entire square I gave him into his little mouth in
one bite which he quickly figured out wasn’t such a good idea! As for my friends with very strong opinions on what is and isn’t kugel, most of them gave this their stamp of approval.
Noodle Kugel (makes 20-25 squares)
2 Cup Eggs Noodles
1 Tbsp Butter
2 Eggs
1/2 Cup Cottage Cheese
2 Tbsp Sour Cream
2 Tbsp Agave Nectar
1/2 Tsp Cinnamon
1/2 Cup Raisins
1. Bring a large pot of water to a boil. Add the noodles and cook for 5-7 minutes. You want them to be tender, but firm.
2. Strain the water off the noodles and place them in a large bowl.
3. Add the butter and toss the noodles so they’re evenly coated.
4. Preheat oven to 350 degrees.
5. Place the eggs, cottage cheese, sour cream, agave and cinnamon in a food processor or blender and pulse to combine throughly.
6. Pour the liquid mixture over the noodles and stir to coat.
7. Pour the noodle mixture into a 9 x 9 greased baking dish.
8. Bake for 25 minutes.
9. Cool and cut into square pieces.
10. Serve.

Finally, I have a delicious recipe — that you don’t have to eat with a spoon — for all those little ones without
teeth. I keep talking to parents whose 12, 13 even 14 month olds still
don’t have teeth. They really want to move beyond purees, but need a
recipe soft enough for their little ones to chew (or gum). These spinach
gnocchi balls are so heavenly that Kenya only got his mitts on 8 or so
before the grownups had eaten them all up!
This is a recipe that Popeye would be proud of. Packed with spinach
and creamy ricotta, these little morsels are like soft pillows:
delicate and so easy to make. You could even serve them with a little
red sauce, but for easier cleanup, I highly recommend just a little
sprinkle of parmesan cheese and that’s it!
Spinach Gnocchi (makes 40 small gnocchi balls)
10 oz Block Frozen Chopped Spinach
1 Cup Whole Milk Ricotta Cheese
2/3 Cup Parmesan Cheese, plus 2 tbsp for sprinkling before serving.
1 Egg Yolk
2 Tbsp Flour, plus more for dusting your hands while rolling
1. Defrost the brick of frozen spinach (you can also do this in the microwave).
2. Squeeze ALL of the water out of the spinach in small handfuls (I use my hands and do it over a bowl to make sure I don’t lose any spinach).
3. Place all of the ingredients in a food processor and pulse. You want to make sure the spinach is in tiny pieces and the mixture is throughly combined.
4. Dust your hands with a little flour so the mixture doesn’t stick to your hands.
5. Take 1 teaspoon of the spinach mixture and roll into tiny balls. Place on a plate covered with waxed paper or parchment.
6. Bring a large pot of water to a boil for cooking the gnocchi.
7. Add the gnocchi to the water in batches and cook for 3 minutes or until they rise to the surface.
8. Using a slotted spoon, remove the gnocchi to a plate or bowl.
9. Sprinkle with parmesan cheese, cool and serve.

I can’t even begin to tell you how incredible this sauce tastes. So good, in fact, that when I finished pureeing it, the weelicious team stood over the food processor eating spoonful after spoonful. Wait, wasn’t the sauce supposed to be for Kenya?
I don’t know if it’s the particular mix of vegetables, the fact that all the produce comes straight from the farmers market or the that everything is roasted and caramelized in the oven, but whatever the reason, the taste is amazing. It’s so good that you could easily serve this recipe to a 10 month old as a puree minus the tomatoes (you don’t want to give them to babies under 1 year in case of allergies).
Plus, it only took me minutes to prepare, which is always great when you have a a million things going on.
The vibrant colors in the vegetables create a sauce so rich and visually beautiful, the uses for it are endless. It’s so versatile you could spread it on toast, fish, chicken, pasta….or just eat it on a spoon like Kenya and I did.
Roast Vegetable Sauce (2 Cups)
1 Small Eggplant, cubed
1 Whole Garlic Clove
1 Tomato, cut into 6 wedges
1 Red Bell Pepper
1 Cup Carrots, chopped
2 Tbsp Olive Oil
1/2 Cup Tomato Sauce
Pasta (I used tortellini filled with parmesan cheese from Trader Joes, but any pasta your little one enjoys will work)
1. Preheat oven to 400 degrees.
2. Place the first 6 ingredients in a large glass dish dish or cookie sheet and combine. Make sure all of the vegetables are evenly coated with oil.
3. Bake for 45 minutes.
4. Cool for several minutes.
5. Place the vegetables in a food processor with the tomato sauce and puree until smooth.
6. Toss some of the sauce with pasta and serve.

This time of year, it seems like all I want to eat is corn. I love steaming up a bunch of ears and keeping them in the refrigerator to snack on. It’s also become one of Kenya’s favorite snacks. For little ones just starting to hold their own food, corn on the cob is a great choice. Kenya proudly holds his ear of corn, like it’s the crown jewels and just munches away.
Corn is full of fiber as well as being high in beta-carotene, vitamin B1 and C. Corn is also a great choice because it’s economical. Our farmers market was selling it for $2 for 3 ears.
When I buy too much (which is often) I love to use what’s left over and make this recipe, which is also inexpensive. When I’m having summer pool parties for the kids and need to feed a crowd on a budget, its perfect.
The entire dish cost me $5.75 when I made a double batch (which served
16) of the recipe below (I also saved a bit more because the cherry tomatoes came from our garden).
With such beautiful colors, a ton of vitamins, and plenty of cheese for little ones who can’t ever get enough, this is a choice dish.
Summer Pasta Salad (8 Toddler Servings)
8 Oz Dry Pasta (I used dry mini cheese filled ravioli that I got at
Trader Joes, but you can use any type of pasta you enjoy)
1 Ear Corn, yellow or white
¼ Cup Asparagus
1/2 Cup Cherry Tomatoes, chopped
1 Tbsp Olive Oil
1 Tbsp Parmesan
1. In a steamer pot of boiling water, prepare the pasta according to the package’s directions.
2. Place the corn and asparagus in a steamer pot of boiling water and cook for 3-4 minutes.
3. When the corn is cool, cut it off the cob and dice the asparagus into small pieces.
4. Throughly combine all the ingredients in a bowl.
5. Serve.

Kenya’s up to his 5th word and it is the cutest thing. Every time he sees something out of the oven or if the water is on, he looks at me with big eyes and says “hot, hot, hot”. When I handed him his first pizza bagel, he could see the cheese just out of the oven bubbling and of course he uttered, “Hot”!
I made 12 of these and Kenya enjoyed them so much, he even wanted to eat them at breakfast.
These pizzas are super simple to prepare and incredibly economical. Why bother buying pizza sauce for $3 when you can make it for less then $1. The best part is that you can refrigerate all the ingredients separately and have them on hand for 2 weeks. These are guaranteed winners for little ones!
Mini Whole Wheat Pizzas (Makes 12 Mini Pizzas)
1/2 Cup Tomato Sauce
1/4 Tsp Garlic Powder
1/4 Tsp Italian Herbs
6 Mini Whole Wheat Bagels, split in half
3/4 Cup Mozzarella Cheese, shredded
1. Preheat oven to 425 degrees.
2. Stir the tomato sauce and herbs in a bowl to combine.
3. Place the bagels on a cookie sheet and coat each one with sauce.
4. Sprinkle with 2 teaspoons of the mozzarella.
5. Bake for 10 minutes.
6. Cool and serve.

One of the biggest culinary hits that I’ve made for Kenya so far is pesto.
I’m not only talking about the traditional pesto made with basil,
though. I’m talking about all different kinds like cilantro, parsley and now my new favorite,
spinach. This recipe is bright green in color and since I added tofu,
it has an even creamier texture then the traditional variety.
Spinach is rich in the antioxidants vitamin C, iron and beta-carotene.
Since it can have a strong taste when cooked, this raw, pureed version
takes on a delicate almost sweet flavor.
I mixed most of it into pasta and then with the remainder, I covered 2
salmon fillets and baked them, one for me and one for Kenya, so
everyone was happy.
Spinach Pesto (Makes 3/4 Cup Pesto)
1 Cup Spinach, packed
1/4 Cup Walnuts
1/4 Cup Parmesan Cheese
1 Tbsp Tofu, silken
1 Small Garlic Clove
1/3 Cup Olive Oil
2 Cups Pasta, cooked
1. Place all the ingredients in a food processor and puree until smooth.
2. Mix with pasta and serve.

There’s nothing more soothing and medicinal then chicken noodle soup.
But how do you get your baby to slurp up a bowl of Jewish penicillin? I made this for Kenya when he had a cold and poor little guy actually seemed to take a turn for the better.
Chicken is high in iron, which supports a healthy immune system. It also contains the antioxidant zinc, which protects babies against infection.
Studies have shown that chicken soup has properties that slow mucus production during illness. Whether this is true or not, I know tons of parents that want to believe anything in order to help their little one feel well. By no means does your baby have to be sick to enjoy chicken soup with stars. It’s super tasty and freezes beautifully.
Chicken and Stars (Makes 15 Baby Servings, freeze 1/2)
1 Chicken Breast
10 Baby Carrots
1/4 Cup Celery (1 stalk), chopped
1/2 Leek or Onion, chopped
1 Tsp Parsley, chopped
1 Cup Pasta Stars, cooked
1. Place the chicken in a steamer pot over boiling water for 3 minutes.
2. Add the carrots, celery and leek and continue to cook for another 5
minutes or until everything is fork tender and throughly cooked..
3. Place all the ingredients except the pasta in a food processor and
puree. Add water from the pot if needed.
4. Combine with pureed mixture with the pasta.
5. Cool and serve.

It’s been so much fun getting feedback from parents about weelicious. One of the comments I get most often is, “why all the purees? Why aren’t there more healthy recipes that have solids?!” My original concerns about babyfood originated about what to feed my own son when he turned 6 months old. I didn’t want to give him commercial baby food out of a jar, so I came up with my own puree recipes. Now weelicious is about to hit its second phase of recipes, to reflect my own son’s changing palette and will hopefully offer more variety to all of you out there.
As always, I post an original recipe daily and very soon will make Fridays “video day”, where Kenya and I will demonstrate a new recipe for you. So, look forward to tons of new recipes that are geared to your baby as well as your toddler.
The idea from these cilantr “O” s came from a trip to the farmers
market. The smell of cilantro was everywhere and I couldn’t resist buying bunches. But, what to do with it all once I got it home? I love the idea of spaghetti O’s, but really don’t want to feed Kenya mushy pasta from a can. I came up with this healthy version of the canned classic. This dish is fragrant and instead of adding salt I put a big scoop of cottage cheese in to give extra flavor, protein and tang.
I made Cilantr “O”s this weekend and Kenya loved them.
Cilantr “O” s (4-6 Baby Servings)
1 Cup of O Shaped Pasta
1 Cup Cilantro, leaves and stems
2 Tablespoons Olive Oil, or more if needed
2 Tbsp Whole Milk Cottage Cheese
1. Cook pasta until tender in boiling water according to package
directions.
2. Drain pasta and let cool.
3. Place cilantro and olive oil in a food processor and puree until
smooth.
4. Place all the ingredients in a bowl to combine.
5. Serve.
