If there’s one food you can always find in our refrigerator, it’s hard boiled eggs. I usually buy a dozen every Sunday at the farmer’s market, boil them up as soon as we get home and then put a big bowl of them in the fridge. Packed with protein and iron, these little orbs are a favorite with everyone in our house, especially when they’re on the go. Hard boiled eggs are super versatile but one of our favorite recipes to make with them is egg salad. Here’s why:

How to Make an Egg Salad Sandwich

  • Combine all ingredients, besides the sandwich bread, in a bowl.
  • Toast bread until golden if desired.
  • Place filling on top of 2 pieces of bread and top with second pieces of bread to make sandwiches.

Egg Salad Sandwiches Substitutions and Additions

While I like to believe this egg salad recipe is unbeatable, don’t hesitate to experiment with substitutions to match your preferences or dietary requirements:

  • Mayonnaise: Opt for a lighter choice by substituting some mayo with Greek yogurt or mashed avocado. You can also use veganaise if you prefer.
  • More Add-Ins: Have fun with your ingredients and feel free to add what you love. Dijon mustard, grated carrots and capers would be great additions. People can get quite finicky about what goes in their egg salad, though, so know your audience!
  • Spices: My recipe just calls for some salt, lemon juice and dill to brighten it up, but feel free to experiment with other herbs and spices. Curry powder, parsley and chives or even some sriracha are a few ideas to inspire you!
  • Ditch The Bread: The best part about egg salad is that it can be enjoyed in so many different ways. Eat it in a sandwich, of course, but also you can nix the bread and add it to a wrap. Or on top of a beautiful bed of greens or just simply with some crackers.

Recipe Tip

Looking for how to get perfect boiled eggs every time? It’s easy! Here’s how:

  • Place the eggs in a large pot and cover with cold water.
  • Bring the water and eggs to a boil and then turn off the heat.
  • Allow the eggs to remain in the hot water for 10-12 minutes.
  • Pour off the hot water and cover eggs with cold water and a handful of ice (this stops the cooking process).
  • Drain, cool and use in your favorite recipes.
