This may be the easiest recipe that I’ve made for our family. It literally takes seconds to toss all of the ingredients in a sheet tray, roast and….tah dah! You have a delicious side dish. Kids and adults alike love these potatoes. And they live up to their name. Kenya had so much fun pretending they were fingers and then gobbling them up!

Roast Fingerling Potatoes

Ingredients  

  • 1 Lb fingerling potatoes, cut in half
  • 1 Tbsp olive oil
  • 1 Tsp sea or kosher salt

Instructions 

  • Preheat oven to 400 degrees.
  • Toss the potatoes with the olive oil and salt on a sheet tray.
  • Bake for 40 minutes or until the potatoes are golden on the exterior and tender inside.
  • Serve.
