This Carrot Raisin Salad is light, sweet and savory all in one delicious dish. It’s so easy to make that you’ll be able to whip this up in no time at all for lunch, dinner or even a fun little snack.

How often do you start making lunch or dinner and are at a loss for what veggie to add to the meal? Carrots are always a great and colorful choice, but maybe you’re not in the mood to have to cook at the stove. I love eating raw carrots, but sometimes I find that they can be hard to digest if I eat too many or if I don’t chew them really well. I imagine that the same thing might happen to kids.

This carrot salad is the easy answer to both issues. All you need is a grater to turn beta carotene packed carrots into a light, sweet salad that takes only minutes to prepare and goes down nice and easy.

Start by grating the carrots into small, thin strips until you get about two cups. Transfer the carrots to a bowl and add one tablespoon of mayonnaise, a half a cup of raisin, the juice of half a lemon and a couple pinches of kosher salt. Stir to combine and serve. 

In addition to a side dish, this carrot raisin salad could be a perfect addition to you children’s lunch if you’re looking to change things up a bit from the regular go-to side of veggies. Make it in bigger batches and you can refrigerate the rest to have for the week. Or bring it to a gathering or potluck and the other guests will be sure to want the recipe as well.

Kid friendly, adult friendly, this salad is a wonderful side dish that the whole family will surely enjoy.

Ingredients  

  • 4 Carrots, grated (about 2 cups)
  • Juice of 1/2 a Lemon
  • 1 Tbsp mayonnaise (or vegan mayonnaise)
  • 1/2 Cup raisins
  • 1/2 Tsp kosher salt

Instructions 

  • Place all the ingredients in a bowl and stir to combine.
  • Serve.

  3. My mom used to make carrot, apple and raisin salad. Never cared for it much, LOL! But then again, she never added lemon juice, and that sounds kinda good. 🙂

  4. My mother-in-law makes a similar salad with carrots and onions and she uses a food processor for the carrots. I think the addition of raisins will be a hit for my 2 1/2 year old!   8. i think my 21 month old would be into this and i’m ready to stop soft steaming carrots! just curious as to what mayo you use. i’ve switched to spectrum organic mayo but its so expensive and we dont use mayo often
