Spinach Pesto on Rice (makes 1 1/4 cups - 5 servings)

Ingredients

  • 2 cups packed spinach
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons grated parmesan cheese
  • 1 garlic clove minced
  • 2 tablespoons lemon juice
  • 1 teaspoon Salt
  • 1/4 cup Olive Oil

Preparation

1. Place all of the ingredients in a food processor and blend until smooth.
2. Stir into rice and serve.
* Can also be mixed into cooked pasta, fish or chicken.
