What childhood memory does summertime conjure up most for you? Hurtling down a Slip N’ Slide on a hot day? Chasing fireflies at twilight? Staying up later than usual waiting for the sun to set? For me it has to be sitting by the side of a pool on a warm day, licking around the sides of an ice cream sandwich. Granted ice cream sandwiches are not as healthy as a juicy slice of watermelon or a bowl of plump strawberries, but my love for them still knows no limit.

Every now and then, we just have to indulge. While it’s easy enough to buy ice cream sandwiches in the store, these days I prefer making my own, especially when you consider what’s in most boxed brands. Plus, it allows me to be creative. For instance, have you ever had your ice cream sandwiched between two honey-kissed, crispy graham crackers? If not, you may want to try this recipe on for size. Graham Cracker Chocolate Dipped Ice Cream Sandwiches are the easiest to make and so delicious!

Graham Cracker Ice Cream Sandwiches Ingredients

  • Pints of Favorite Ice Cream
  • Graham Crackers
  • Melted Chocolate or Magic Shell

How to Make Graham Cracker Chocolate Dipped Ice Cream Sandwiches

  • Prep the Ice Cream. Line an 8 x 8 inch baking dish with parchment paper making sure the edges come up on two sides. Spread the softened ice cream evenly in the lined pan and place in the freezer overnight.
  • Prep the Graham Crackers. Break the graham crackers in half so that you have 18 squares.
  • Make the Ice Cream Sandwiches. Using the edges of the parchment paper, lift the ice cream on to a cutting board. Slice the ice cream into 9 equal squares. If desired, spread melted chocolate on all the graham cracker squares then sandwich ice cream squares between two graham crackers.
  • Freeze the Ice Cream Sandwiches. Place the ice cream sandwiches back in the freezer for at least 10 minutes before serving.

Tips for This Recipe

  • The trick for perfect ice cream squares is easier than you think. Soften the ice cream a bit and spread evenly into a parchment lined 8×8 inch baking dish. Be sure to leave parchment paper hanging over two sides. Refreeze the ice cream overnight and then lift it out using the parchment paper. Finally, cut it into graham cracker shaped ice cream squares.
  • The best chocolate for this recipe, will be this Magic Shell! When it hits the cold ice cream it will turn into a hard shell and provide a delicious and satisfying chocolate crunch when you bite into the ice cream sandwiches.
  • Don’t forget to refreeze after you make the sandwiches. It is ice cream after all, the longer it’s at room temperature, the faster you’ll have a big mess. Place the completed ice cream sandwiches in the freezer for at least 10 minutes so that they’ll be less messy to eat!
  • Use your favorite ice cream flavor. Whatever you love will be fantastic! We’ve done cookies and cream and even strawberry ice cream and they’re both insanely delicious, especially paired with the chocolate magic shell.

  3. The chocolate is in the recipe, it says it optional to spread.
    I also can see it, when I look closely at the photo – it’s on the inside layered betweeen the graham cracker & ice cream. It’s seeping out in a few spots.
