Pumpkin Pie Parfaits

I've got two little whipped cream addicts on my hands. It's no mystery why to me because the apple doesn't fall too far from the tree. Whenever my mom served pie during the holidays (usually pumpkin, chess and/or pecan) she would hand out each slice with a huge dollop of cool, creamy, fluffy whipped cream on top. Nothing out of a tub, can or jar, mind you. She made the real stuff, and as soon as I was able to hold a hand mixer I would butt my way in next to her to learn how to make the perfect batch. Real organic whipped cream is always worth the extra few minutes it takes to prepare it. You can see here just how simple and totally worth it is!

These adorable pumpkin pie parfaits are like a pumpkin cheese cake made with layers of cream cheese, crushed graham crackers, and of course, heavenly whipped cream.

Three major reasons why I love this dessert_

1. Kids 4 and up can do almost every step of this recipe on their own.

2. It can be prepared 24 hours in advance, so all you need to do after dinner is pull the jars out of the fridge and serve.

3. It's a ton of fun plunging your spoon into the jar and cutting through the luscious layers of this incredible treat!

If you want a special fall or Thanksgiving dessert that will put a smile on everyone's face, this is almost certainly the one.

Pumpkin Pie Parfaits (makes 10 parfaits)

Prep Time: 10 mins Cook Time: 0 mins

Ingredients

  • 1 cup Pumpkin Puree
  • 1 cup whipped cream cheese, or non-whipped at room temperature
  • 1 teaspoon Pumpkin Pie Spice
  • 3 tablespoons brown sugar
  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 2 sleeves graham crackers, crushed (about 2 1/2 cups)
  • 10 8-ounce mason jars

Preparation

1. In a large bowl, mix together the pumpkin, cream cheese, pumpkin pie spice and brown sugar with an electric mixer until thoroughly combined, about 2 minutes.

2. In a separate bowl, or in the bowl of a stand mixer, beat the heavy cream and powdered sugar until light and fluffy, about 5 minutes.

3. Layer the parfait ingredients into mason jars in this order: graham crackers, pumpkin cream cheese mixture, whipped cream. Continue to layer to fill the jar, at least 2 layers of each ingredient.

4. Serve chilled.

    Could I try making this as one big parfait? I'd like to make them for Thanksgiving, but we're having 16 people, so I thought it would be nice to make this, but all in one bowl. Would that work, or am I missing something?

    I've recently cut white sugar out of my diet, so I'm going to try this with some subsitutions.. Maple syrup in the whip cream (I tried this on thanksgiving and it was amazing!), but for the pie part I'm not sure if coconut sugar or agave would be better... any thoughts? The graham crackers are going to take a little more digging..

    I have made this twice now, once to test out and again tonight to take to a work pot luck tomorrow. The first time I ran out of pumpkin filling, but had tons of graham crackers and whipped cream left. This time I doubled the pumpkin filling but left everything else the same. I must have used too much of the pumpkin in my first layer because I ran out again and had to really spread it thin in my second layer and ended up junking up lots of the crumbs layer! I put it into a 9x13 foil pan that can be thrown away after, and this time I had just enough whipped cream and used one sleeve of crumbs for each graham layer. Despite my challenges, my son and I both loved this!
