Celery Root Soup Video

Last week I shared with you one of my favorite party recipes, Celery Root Soup, and this week I present to you this How to Make Celery Soup video in honor of the lovely Joy Cho of Oh Joy Studios. Joy is about to have her second baby, and so I got together with a bunch of my favorite lifestyle creators to throw an online baby shower for her. Joy is incredibly giving and creative, so we wanted to do something special to help welcome her little one into the world.

Celery Root is one of those vegetables you may not use often (or possibly have never used), but should be! While its appearance can be daunting, its delicious flavor truly makes it worth learning how to cook with, and this video highlights a few of my quick tips and tricks on how to use it.

People generally have no idea what’s in this soup when they first taste it, but end up immediately loving. I like making it with chicken stock and butter, but you can easily substitute vegetable stock and olive oil respectively if you prefer it to be vegan.

Serve this soup warm in little shot glasses with a few other nibbles like Tomato Bruschetta, Stir Fried Chicken in Lettuce Cups and Raspberry Cream Chocolate Cookies for a baby shower that everyone will remember. Congratulations Joy!
