Chilled Avocado Soup (serves 6)

Ingredients

  • 2 medium avocados, halved and pitted
  • 1/2 cup plain greek yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • 1 1/2 cups low sodium chicken or vegetable stock
  • 1/2 teaspoon kosher salt

Preparation

1. Spoon the flesh of the avocados into a food processor. Add the remaining ingredients and blend on high until smooth.

2. Transfer to the refrigerator until chilled.

3. Serve with desired accompaniments.
