You wanna know a secret about me? I love transforming food. It’s basically the mad scientist in me. There’s truly nothing more fun and playful than taking a whole food like a fruit or vegetable and transforming it into something totally different and unique. It’s part of the reason I started Weelicious in the first place and this Shaved Vegetable Salad is a perfect example.

Some kids (and adults for that matter) just don’t like certain vegetables. Time and time again, though I’m happily surprised when I take a less than loved vegetable and turn it into something the kids love. Chloe is a perfect example. For the longest time she vowed that she hated radishes, but when I shaved them through this mandoline, drizzled the slices with olive oil, a squeeze of lemon juice and a sprinkle of salt she would eat a plate full. The same goes for Kenya when it comes to carrot. He’s never been the biggest fan, but in this Shaved Vegetable Salad he will gobble them up.

This Shaved Vegetable Salad is about change the game for the way you and your family enjoy veggies.

Ingredients  

Vegetables:

  • fennel
  • cucumbers
  • carrots (any color), peeled
  • celery
  • radishes (any type)
  • asparagus
  • beets (any color), peeled
  • artichoke heart, raw
  • zucchini
  • yellow or patty pan squash
  • cabbage
  • kohlrabi 
  • turnips
  • parsnips
  • celeriac
  • rutabaga

Other Ingredients:

Instructions 

  • Using a mandoline, thinly slice vegetables and place on a plate or platter.
  • Lightly drizzle with olive oil, a squeeze of lemon juice and sprinkle with kosher or maldon salt.
