Healthier Creamed Spinach (Serves 4)

Ingredients

  • 1 tablespoon unsalted butter
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 tablespoon all purpose flour
  • 2 10 ounce packages, frozen chopped spinach, defrosted and drained well
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups low-sodium vegetable broth
  • 1/2 cup sour cream

Preparation

1. In a large saute pan over medium heat, melt the butter. Add the onions and saute for 3 minutes, add the garlic, and saute an additional 30 seconds. Sprinkle in the flour, stir, and cook 30 seconds more.
2. Add the remaining ingredients and stir to combine. Cook for 3-5 minutes, until the mixture thickens.
