Avocado Cucumber Tomato Salad (serves 6 )

Ingredients

  • 1 cup cherry tomatoes, halved
  • 3 ripe tomatoes, sliced
  • 4 persian cucumbers, sliced into coins
  • 2 ripe avocados, cubed
  • juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt

Preparation

1. Place the first 3 ingredients in a large bowl.

2. Whisk the remaining ingredients in a separate bowl until emulsified.

3. Add the avocados to the large bowl with the other vegetables, pour the dressing over the vegetables and gently toss trying to avoid smashing the avocados.
