I was watching a movie set in Ireland last week and my mind started drifting off into food land. Wait, why hadn’t I ever prepared a traditional bangers and mash? It’s such an easy recipe to whip up and these days it’s really easy to find healthy, organic sausage which Kenya loves.

In no time flat, I had this dinner ready for Kenya and a bunch of his little friends. The best part was that I didn’t have to slave in the kitchen for hours preparing it and I already had most of the ingredients in my fridge. It was fun watching the kids dip their pieces into the mashed potatoes and then chow down. And I will say that mashed potatoes, even healthy ones like these, are usually an easy sell with kids of any age.

Bangers & Mash

Ingredients  

  • 3 Idaho Potatoes, peeled and chopped
  • 1/4 Cup milk, warmed
  • 1 1/2 Tbsp butter
  • salt & pepper to taste
  • 1 Package Organic Sausage (4 Links)

Instructions 

  • Bring a large pot of salted water to a boil.
  • Add the potatoes to the water, reduce the heat to a simmer and cook for 12-15 minutes or until fork tender.
  • Drain the potatoes and add to a bowl with the butter, milk, salt and pepper.
  • Mash the potatoes with a hand held masher until fluffy.
  • Heat a lightly greased saute pan over medium heat. Poke sausage with a fork, add to the saute pan and cook for 7-8 minutes or until cooked through (you may want to follow the package directions on the amount of time).
  • Slice sausage into several pieces.
  • Place a heaping spoonful of mashed potatoes on a plate and top with sliced sausage.
  • Serve.
