There are a few classic sandwiches that I feel like every kid should try at least once in their childhood. Grilled cheese is the first that comes to mind. If you’re anything like me I’m betting you’ve made more than your fair share if you have a child over 2 years old. Chloe even went so far as to add dill pickle slices to hers creating an insanely delicious combination.

My grandfather was a great lover of good old reuben topped with sliced pastrami, tons of sauerkraut and thousand island dressing, so that personally comes in a close second. But when summer time rolled around and there were ripe juicy tomatoes pouring off the vines of my grandparents yard, it was all about the BLT. While the crunchy bacon, crisp lettuce and smear of mayonnaise were enticing enough, there was something about those juicy, ripe tomatoes with a touch of sweetness and acidity that kept me coming back every time.

Last week at the farmers market I couldn’t resist a loaf of freshly baked baguette, so I took it home to turn into croutons and Peach and Ricotta Crostini and loved the idea of making these little BLT Bites. Baguette slices, toasted or un-toasted as we prefer (so they’re easier to bite into), are the perfect canvas for this classic kid-friendly combination.

In planning our Fourth of July this year I wanted to make a really fun appetizer that the adults and kids would love. For the first time in years we’re going to be on the east coast to celebrate with family and friends making it quite an adventure for the kids. I’m already looking forward to small town street parades, the kids holding sparklers, catching fireflies and eating all of the traditional foods I remember during the red, white and blue holiday.

Ingredients  

  • 1 baguette, sliced
  • 1/2 cup light mayonnaise
  • 2-3 romaine lettuce leaves, torn into 2-inch pieces
  • 4 small tomatoes, sliced
  • 4 slices cooked bacon, chopped into 1-inch pieces
  • 2 Green Onions, chopped
  • maldon sea salt

Instructions 

  • 1. Lay the bacon in a large skillet over medium heat and cook until crispy on both sides, flipping once, about 10 minutes. Remove the bacon to a plate and blot any excess grease with paper towels, then cool slightly and chop into 1-inch pieces.
  • Spread a baguette slice with mayonnaise, then layer the bacon and remaining ingredients on each in the following order: lettuce leaf, tomato slice, bacon, scallions and a sprinkle of sea salt.
  • Arrange on a platter and serve.
