Chocolate Sun Butter Pancake Sandwiches (makes 8 sandwiches)

Ingredients

  • 1 recipe whole wheat pancakes (recipe linked below)
  • 2 tablespoon semi-sweet chocolate chips
  • 1/4 cup sunflower butter

Preparation

1. Make pancakes according to recipe directions, place on a cooling rack, and allow to cool fully.

2. Melt chocolate chips in a microwave for 40 seconds or over a double boiler until melted and allow to cool.

3. Stir sunflower butter into melted chocolate.

4. Spread 1 teaspoon of the chocolate sun butter mixture on a pancake, and sandwich together with another pancake.
