Citrus Herb Vinaigrette

  • 1 small shallot, diced
  • 2 tablespoons chopped fresh herbs of choice (chives, basil and parsley are favorites)
  • 2/3 cup olive oil
  • juice of 2 lemons (about 1/4 cup)
  • 1 tablespoon white wine vinegar
  • 1 tablespoon dijon mustard
  • 2 teaspoons honey
  • salt and pepper to taste


1. In a liquid measuring cup or bowl, combine all of the ingredients. Stir well with a small whisk or a fork until the ingredients are completely mixed together.

2. Serve immediately, or cover and place in refrigerator for future use. Vinaigrette will last in the refrigerator for 7-10 days.
