Kenya's Peach Cake (1 9-inch square or round cake - 12 servings)

Ingredients

  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup low fat milk
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1 peach cubed
  • * You can substitute the peach with an apple, pear or 2 plum

Preparation

1. Preheat oven to 350 degrees.
2. In a bowl, sift the flour, baking powder and baking soda.
3. In a separate bowl, whisk together the milk, honey, brown sugar, egg, and vanilla.
4. Mix the wet ingredients into the dry ingredients until just combined, and fold in the peaches.
5. Pour batter into a greased 9 x 9 inch square or 9-inch round pan and bake 25 minutes, or until a wooden pick inserted in the center comes out clean.
