Mix It Up Muffins (makes 10 regular size muffins)

  • 1 cup white whole wheat flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 large egg, beaten
  • 1 tablespoon canola oil
  • 1 cup buttermilk


1. Preheat oven to 350F.

2. In a bowl, whisk together flour, sugar, baking powder, baking soda and salt.

3. In a separate bowl, whisk together egg, oil and milk.

4. Divide the batter evenly between two bowls.

5. Fold the mix ins into the batter. You can even separate the batter and make two types of muffins. (Use 1/2 - 3/4 cup of mix ins for each half of the batter - up to 1 1/2 cups of mix ins per full muffin recipe!) See Accompaniments below for mix in ideas.

6. Pour batter into greased or lined muffin cups and bake for 20 minutes for regular size muffins, or 15 minutes for mini muffins, until a toothpick inserted in the center comes out clean.
