Quick Pickled Onions (1 Jar Pickled Onions)

Ingredients

  • 1 red onion, thinly sliced
  • 1 cup water
  • 1 cup white vinegar
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 2 teaspoons black peppercorns

Preparation

1. Place the sliced onion in a tall mason jar.

2. In a medium saucepan bring the remaining 5 ingredients to a boil, reduce to a boil and stir until the sugar and salt dissolve, about 1 minute. Allow the mixture to cool.

3. Pour the liquid over the onions, cover and refrigerate. Onions are ready when they’re pink and tender, about 1 hour. Refrigerate onions up to a month.
