Roast Acorn Squash (Serves 2-4)

  • 1 acorn squash
  • 2 tbsp olive oil
  • 1/2 teaspoon kosher salt
  • 2 tablespoons maple syrup


1. Preheat oven to 400 degrees and line a baking sheet with foil.

2. Cut acorn squash length wise in half, then into wedges. 

3. Place the squash wedges on a baking sheet, drizzle with olive oil and sprinkle with salt.

4. Bake for 30 minutes.

5. Drizzle the squash with maple syrup and toss to coat. 

6. Bake for an additional 20 minutes or until tender.

7. Serve.
