Summer Pea Salad (Serves 4)

Ingredients

  • juice of 1 lemon
  • 2 Tbsp olive oil
  • 1/2 Tsp kosher salt
  • 2 Cups Green Peas, cooked & cooled
  • 1/4 Cup Red Onions, diced
  • 1/2 Cup celery, diced
  • 1 Cup cherry tomatoes, halved
  • 1/2 Cup Crumbled Feta or Goat Cheese
  • 2 Tbsp Fresh Parsley, Cilantro or Mint

Preparation

1. Place the first 3 ingredients in a large bowl and whisk to combine.
2. Add the rest of the ingredients and combine.
3. Serve.
