How many days a week do you look in the refrigerator at a total loss for what to make for school lunch? You probably already have a ton of food staples in your fridge, but no idea how to put them together to create something your kids will love. When I came up with this super easy sandwich spread, it was one of those times.

Cream cheese and sun dried tomatoes are two foods that I always keep on hand, but until my last lunch emergency, I had never thought about mixing them together. Well, I did it and it was like they were made for each other. What do you know, I made a love connection between two strangers in my fridge! The result was a creamy, delicious spread that’s perfect to put on bagels, toast or even crackers. Keep a small batch of it in a small bowl (it should keep for a few weeks if you can resist eating it that long) and any time you’re banging your head against the wall about what to make the kids for lunch, you’ll be totally ahead of the game!

Sun Dried Tomato Cream Cheese Spread

Ingredients  

  • 8 ounces cream cheese
  • 1/2 cup oil-packed sun dried tomatoes drained

Instructions 

  • Place the sun dried tomatoes in the food processor and blend till chopped fine.
  • Add the cream cheese and puree.
  • Spread on sandwich (I like to add a few leaves of fresh basil) and serve.

  2. Made this for my toddler’s lunch today spread inside a whole wheat pita. He didn’t leave one crumb in his plate and I gave him a whole pita! I made one for myself and I loved it too. Great with some celery as well.

  6. Where can you find the sun-dried tomatoes? I’ve seen you reference them a few times and how you always try to have them on hand. Is it in a particular place in the store? Thanks! This recipe sounds super yummy!!!!

  7. I have not tried it but i’m sure you can! Just puree these fruit and then add the cream cheese and blend. Since the fruit is fresh , I am not sure how long it will last. You can even try it with dried fruit. Let me know how they turn out!

  8. My husband, daughter and I ate a batch of this spread in 4 days! I am making my second right now! We loved it on toast, sandwiches, wraps, whatever! My 2 year-old called it “pizza”…she ate it up…yee-haw!

    Can you make other flavored cream-cheeses the same way? Like fruit flavored? I assume strawberries would work, or would it be too watery?

  9. I can’t wait to try this! I don’t feed my kids lunch meat and I have one who isn’t a big meat fan anyways, and it seems like he’s always eating cream cheese and cucumber sandwiches or wraps. I will definitely try this as an alternative, and I’ll bet it’s good with spinach.

    For my toddlers, I often make pinwheel (tea) sandwiches, and this would be great for that. Thanks!

  10. I love making my own sun dried tomatoes in the oven – do you think those would work? They’d be lower calorie too since they wouldn’t be packed in oil – right?
