Wheat Germ Parmesan Crackers (makes 4 dozen 2-inch crackers)

  • 3/4 cup wheat germ
  • 3/4 cup white whole wheat flour
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 cup unsalted butter, cut into cubes and chilled
  • 1/4 cup water


1. Preheat the oven to 350 F.

2. Place the wheat germ, flour, cheese and salt in a food processor and pulse to combine.

3. Add the butter and pulse until the mixture resembles coarse meal.

4. Add the water and continue to pulse until the dough comes together.

5. Remove the dough from the food processor, shape into a disk, and roll out between two pieces of parchment paper to 1/4 - 1/2 inch thick.

6. Cut dough into 2-inch square crackers, or use your favorite small cookie cutters to cut dough into shapes.

7. Place the crackers on a Silpat or parchment-lined baking sheet and bake for 15-18 minutes, until golden brown.
