Carrot Raisin Salad

Ingredients  

  • 4 Carrots, grated (about 2 cups)
  • Juice of 1/2 a Lemon
  • 1 Tbsp mayonnaise (or vegan mayonnaise)
  • 1/2 Cup raisins
  • 1/2 Tsp kosher salt

Instructions 

  • Place all the ingredients in a bowl and stir to combine.
  • Serve.
