(I like to use whole wheat or spelt tortillas)

BBQ Sauce

Crock Pot BBQ Chicken
, shredded, divided

Cup
Jack or Mozzarella Cheese, divided
Instructions
Place one tortilla in a dry pan over medium heat ( I use a cast iron skillet).
Spread 1 tbsp of BBQ sauce over tortilla.
Sprinkle 1/2 cup of cheese over tortilla and 1/2 cup of shredded chicken over cheese.
Top with another tortilla and heat through, about 3 minutes on each side or until cheese is melted and tortilla is slightly toasted.
Repeat for the second quesadilla.
Cut into wedges and serve.
