Corn & Black Bean Salad

Ingredients  

  • 2 Ears of Corn, husked and cleaned or 2 Cups of Frozen Corn Kernels, defrosted
  • 1 16 Oz. Can Black Beans, rinsed
  • 1 Red Bell Pepper, small dice
  • 2 Tbsp cilantro
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • 1 Tsp honey
  • 1/2 Tsp kosher salt

Instructions 

  • Bring 1 inch of water to a boil and add the corn.
  • Cover and steam for 5 minutes, remove and let cool.
  • Cut the corn off the cob and place in a bowl with the remaining ingredients.
  • Stir to combine throughly.
  • Serve.
