Strawberry Spinach Salad

Ingredients  

  • 5 cups (or 5 ounce package) baby spinach, packed
  • 1 cup mushrooms, sliced thin
  • 2 cups strawberries, sliced thin
  • 1/2 cup sliced almonds
  • 1 tablespoon honey
  • 3 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon kosher salt

Instructions 

  • Place first 4 ingredients in a bowl and toss to combine.
  • Place remaining 5 ingredients in a bowl and whisk to combine.
  • Toss the dressing with the salad.
  • Serve.
