All Veggie Nachos

Ingredients  

  • 3 bell peppers, seeded and cut into triangles
  • 1/4 cup light sour cream
  • 1 teaspoon lime juice
  • 1 persian cucumber, diced
  • 1/2 cup quartered cherry tomatoes
  • 1/2 avocado, pitted
  • 3 tablespoons grated mexican blend cheese

Instructions 

  • Place the bell pepper “chips” on a plate.
  • Whisk the sour cream and lime juice in a small bowl.
  • Drizzle the bell pepper “chips” with sour cream sauce and the remaining ingredients to form veggie nachos.
