Baked Nectarines with Honey Yogurt Sauce

Ingredients

nectarines or peaches
halved and pitted
▢
juice of 1/2 lemon
▢
1/2
cup
greek yogurt
▢
1-2
tablespoons
honey
▢
2
tablespoons
pistachios, chopped
Instructions
Slice nectarines in half and remove pit.
To Bake:
Preheat oven to 400°F.
Place nectarines in a 8 x 8 inch baking dish and squeeze with lemon juice.
Bake for 10-15 minutes or until tender.
Remove from oven and cool for several minutes.
To Broil:
Preheat broiler.
Place cut nectarines on baking sheet and squeeze with lemon juice.
Broil 4-5 minutes, cut side up.
To Grill:
Preheat grill to medium/high heat.
Squeeze lemon juice on cut nectarines. Grill 3-4 minutes cut side down.
While nectarines are baking, broiling or grilling, mix yogurt and honey together in a small bowl.
Spoon yogurt sauce on nectarines and sprinkle with pistachios.
