Peach Crumble

Ingredients  

  • 4 ripe peaches
  • 2/3 cup old fashioned rolled oats
  • 1 tablespoon flaxseed
  • 1/3 cup all purpose flour
  • 4 tablespoons butter, chilled
  • 3 tablespoons sugar, honey or agave nectar

Instructions 

  • Preheat oven to 375F degrees.
  • Chop peaches and divide evenly between 6 dishes.
  • In a mini food processor, combine the oats, flaxseed and flour. Pulse to combine.
  • Add the butter and sugar and pulse until butter is in small pieces (you don’t want it to turn into a dough, so make sure to just pulse the ingredients).
  • Place small clumps of the crumble on top of the ramekins.
  • Place the ramekins on a sheet tray and bake for 20-25 minutes.
