Creamy Corn Pudding

Ingredients  

  • 8 corn cobs
  • 2/3 cup granulated sugar
  • 1/4 cup all purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon kosher salt
  • 1/4 cup butter, melted

Instructions 

  • Preheat the oven to 325F.
  • Cut the corn kernels off the cobs and place in a blender.
  • Add the sugar, flour, milk, eggs, nutmeg and salt on top of the corn in the blender, and puree for 10 seconds, just to get everything combined.
  • Pour the mixture into a greased 8x8 inch baking dish, and drizzle the melted butter on top.
  • Bake for 60-75 minutes, until a toothpick inserted in the center comes out clean.
